Why do you use linseed oil? Is that to seal the wood or does it make it more paintable?

That appears to be a Helvie knife. Considered by a lot of people to be the best carving knives available. Unfortunately they are hard to get. They are handmade by a husband and wife team and can take up to 250 days to get.
