What impresses me the most is how the owner -- also the only chef -- at this restaurant tightly controls the quality of every thing. From picking and buying seafood at the market every morning, to preparing the food, he does everything himself with his own discernment. To ensure freshness and elasticity, he handmakes the soba noodles every day. It is sheer hard work and dedication, but when you see the satisfaction on the customers' face, I think all is worth. I want to dine at this restaurant too 😄
