CHITTAGONG, BANGLADESH - Welcome to Chittagong in the south of Bangladesh, along the coast, is famous for its mezban - a traditional meal celebration where a full cow is cooked into 4 different dishes. Today we have the extremely special opportunity to see the dishes of a mezban being prepared and to watch the entire process.
Mezzan Haile Ayun (goo.gl/maps/TBKPjdYTHNudh4nL9) is a restaurant in Chittagong with locations in Dhaka and Sharjah that specializes in mezban. We had the privilege to go to their central kitchen to watch the entire process. Every mezban meal starts with an entire cow - the full cow. The meat must be fresh and they parted it out within 45 minutes, all the way from cow to cubes.
The most important dish is the mezbani beef, a curry, but like a slow cooked stew filled with beef, a huge amount of spices, green chilies, mustard oil, and one of the signature tastes from a spice called radhuni. Every dish cooks over fire, slow cooked until fully mingled and flavors melting together. Additionally there’s black beef cooked in spices and dry fried until all the spices were caked onto each cube meat. Another dish is the daal, which is cooked with all the organs of the cow. And finally the bones which are cooked for the flavor, bone marrow, in a soup. The entire meal, all four dishes are a traditional Bangladeshi mezban.
The meal was outstanding, so much flavor so fresh, and so complex. All the dishes each went together in perfect harmony. It’s one of the best food experiences in Bangladesh and it was truly memorable.

Aside from the food, the people are just so friendly and hospitable. You can see how they really took care of their guests! One of the best things about watching Mark's videos is the fact that I see a glimpse of other people's lives and culture. Super love watching his videos!

Mezban...I hope I spelled that correctly...but in my life I never knew I could watch an entire cow consumed in such rich and flavorful ways! Thank You! What amazes me the most about watching you enjoy the dishes is how you have no problem whatsoever using your fingers and hands to eat. Amazing! These cultures must LOVE sharing their dishes in the way they eat them with a master like yourself who will do the same. Congratulations!

If possible do try at home to use fingers. When you touch food, put into your moth it gives you serious connection with food that you will never ever experience with spoon and fork and foods that we eat here in Bangladesh, India or Pakistan has to be mixed with some other items in most of the cases. So those are not suitable to be eaten by spoon or fork.

Each and every dish here, has It's own uniqueness and delicacy. Can only be found in Chittagong, Bangladesh. You can't find these with authentic taste in other BD cities. I was born and raised in UAE. and in my area i had so many Bengali friends and i always loved to attend the weddings.. They use to make cow curry and damn it tasted good.. miss it so much now that i live in Australia.... love Bangladeshi food any day...

I’ve never once seen Mark act pretentious,privileged or be ungracious even when something wasn’t that great to eat and THAT is why people like him. He’s informative and enjoys the people as well as the food. With a million channels promoting narcissism,selfishness and a LOT of fake content I happily watch him for the escape.

Thanks a lot for showing the cooking process of Mezbani beef Mark. As a British Bangladeshi, I have not had the opportunity to experience traditional Mezban. Thanks for taking us through this amazing journey. Now I know the secret, I will have a go at making Mezbbani beef. For the attention of all those adventurous cooks around the world and Mark’s subscribers, the spice, radhuni powder used in mezban meat is powdered wild celery seeds (ajmod in Hindi). The dal is chickpea lentil.

Usually people all over the world are hospitable to their guests. That's what I realised from Mark's videos. It is not limited to Muslims or Bengal. But I love " bangali cuisines and appayon" as I am from West Bengal :)

The signature ingredient is the radhuni. Its adds the unique touch to bengali dishes. It looks like carrom seeds (ajwain) however the taste is completely different. The closest thing to radhuni is probably celery seeds. Great video as always, the mezbani meat dishes look awesome.

we mostly use Chiniguara or Kalijira (now rarely used) for polau (some country it is called pilav rice or something similar) Specially Kalijira rice is more fragrant than basmati or Chiniguara rice. I actually prefer kalijira rice over Chiniguara or basmati rice.

For plain white rice, we actually use neither jasmine nor basmati (I know of one dish only that we use basmati for i.e. not super common in our cuisine). It's a large grain hardy rice that has a lot of texture and a distinct earthy flavour (I wouldn't call it aromatic) and is perfect to pair with our aromatic and spicy curries, mashes, and stir fries :)

I’m from Bangladesh 🇧🇩. The whole process of cooking the whole cow🐄 is quite astonishing! Besides, this is one of many ways we Bangladeshis cook and eat! In my childhood I used to attend where 7 or 8 🐄 were cooked and thousands of people ate in the open yard! I couldn’t forget those arrangements. Those kind of gatherings were really very special I enjoyed the food with massive crowds! It was so delicious and delightful to eat! Is the mezban in dhaka supplied from chittagong, or do they have a place where they do the same thing and then it arrives in the restaurant? And is mezban a brand name or a food delicacy of chittagong? Never been there so I have small knowledge about it.

@@abubakarsiddik3227 MEZBAN is a tradition of Chittagong. This is a feast made with a whole cow for any celebration in chittagong or even in death anniversaries of people. However in this video this is a restaurant "Mejjan haile aiyun" which is built to give the traditional Mezban experience to people.... Obviously restaurant's Mezban and actual Mezban has to differ a little in taste As for the dhaka branch of the restaurant I think they have a central kitchen in dhaka.... Coz it's not possible to cook mezban from ctg and deliver to dhaka. If you ever get invited to an original Mezban in ctg don't miss it .... I'm sure you'll not regret ☺️

Chittagong area was mainly inhabited by Chakma oriental ppl but you Bengali guys had taken over their lands and relegated them to second class citizens. We could see 1 native person who was amongst the staff.

Ni hao fungeo. While I was in Beijing (1994-1995), my driver Lee was loving Bangladeshi food specially beef. Sometimes he used to bring 4/5 Jin (2/ 2.5 kg) of beef to my house and get it cooked by my wife and take to his house.He told me that his whole family (self, father, mother, wife & a son) were loving Bangladeshi food. All friendly, smiling familiar faces and great hospitality of the sub-continent! When I was a teenager and studying, Dacca, Chittagong and Comilla was in my top list to visit ... I really miss my class fellow when I was studying Fine Art, Jahangir, who was from Comilla!!! Another person I miss badly is our elder brother, Abdul Ghafoor, he used to work for us but always treated as a family member, he used to call everyone with the relations we have, like Dada Jan, Abba, Ammi, Mamoo and Khala! The last time I had mezban was in 2018. We flew in from Dhaka to Chittagong for my cousin sister's wedding feast or Walima. The dishes were exquisite and frankly I can't wait to be able to travel again so I can go to BD again. Since then I've gotten married and had kids so hoping they'll love Bangladesh the way I do.

I’m a Pakistani settled in Kuwait and although we have a huge population of Bangladeshis here there’s no proper restaurant that serves authentic Bangla food. Id love to try their cuisine it looks delicious. Yum yum 😋

Wow ! Badly missing from UK. Bangladeshi peoples are very big hearted, always welcoming and the country has very very delicious authentic foods also great natural places to see like longest unbroken Sandy beach in the world, biggest mangrove forest in the world called Sundarban, Dhaka lal bagher kella, Sylhet tea gardens and so so many more!!
