Gözleme:
Gözleme is a Turkish specialty that takes the form of a pancake made from phyllo dough (or yufka), which can be stuffed with minced meat, vegetables such as potatoes, spinach, cheese or egg.
Preparation:
The main ingredients for the gözleme dough are flour, water and salt. As with making bread, it is best to let the dough rest for about an hour, so that it doubles in volume. Gözleme is traditionally cooked on a curved sheet (the bag) placed on a fire, or directly in a pan. The dough is then garnished with vegetables such as potatoes, spinach, eggs or even cheese.
