Greg, thanks for putting this together. I live in Washington but travel to California for business all the time. My number one stop for lunch and/or dinner is Umami. I'm obsessed. Like you, I did my homework and tried to duplicate or come close at home. Since I like the truffle burger, it was fun to actually put it together and have the taste nearly exact. The truffle doesn't use the tomato though, so I could skip that step. The buns are great there and are more of a Portuguese style or Brioche bun if I'm not mistaken. I love Brioche and that's what I used. Very light, good absorption rate and easy to work with. To me, the Umami burger exemplifies what a good burger should be. I have no interest in the piled-high, kitchen sink, food coma burgers that I see so many places serving. Thanks again!

@Geraldo Sousa I usually mold my burgers by hand, but on this burger, I used a biscuit ring mold which are available at stores such as William Sonoma. There are molds made specifically for burgers online. You need to change your settings so people can actually respond to your comments brother!

themadman39 I would hit The Shake Shack in NY, simply because it's such an iconic place and in Vegas I'd go to Gordon Ramsay's BurGR inside of Cesar's Palace.

+Ballistic BBQ So the mold will help keep it in that restaurant shape. I have tried forming them by hand and they end to fall apart or they are more egg shaped and do not cook evenly.

Greg, you have serious chops. The work that goes into the recreations of these burgers (I am bingeing on this genre right now) is amazingly impressive. I think most people do not appreciate how much time, effort, and money goes into research, let alone the equipment. So here is a challenge. The best, cheapest burger you can make. Where is the trade-off on making a good burger to making a great burger as cheaply as possible? For instance, is mayo necessary, and if so, does homemade trump store bought? Does the addition of garlic powder, onion powder, salt and pepper (or any other ingredients) introduced into the mix before patty formation affect the flavor and texture? Does refrigeration or freezing (especially for very thin patties) contribute to better Maillard reaction? What role does juice retention play in overall satisfaction (not including outside condiments). Where does the essential beef essence reside? Is it grass fed or feedlot finished? It may take a number of episodes to explore some of these data points.

@@Dawho99 They came after me with a law firm out of Chicago over this video. They were telling me that I was violating their copyrighting of the name "Umami Burger." After a little research, I found that they had lost a lawsuit they filed against a pizza restaurant called, "Umami Mia." So, I told them to pound sand, and have not been back to their restaurants since. No, I guess I went the long way to say, that I do not miss them.

I know this is rediculously simple man. & u may have already covered it. But a Wendys double stack...its different every time i try it?...yet one time i had it it & it was friggen awesome!....like mustard pickles onions. But then other ti es it was different?. Id like to know the true one. ...other than that. Just completed a marathon viewing of your burgers, Greg and had to stop twice to eat. Definitely some of the best burgers on the internet! Great work, all around. People that don't know what 'build' means, when referring to food, must be those who assemble or create. haha Hey, I didn't see your version of the In N Out burger. Had a few while I was state side and they are right up there with the best and healthiest. Well, you know what I mean -fresh ingredients and no trans fats etc. Would love to see your take on one of them bad boys. Keep on doing what you do!

Wow, what an incredible creation Gregg, once again, I am going to attempt this at some point, I will now check the links for the other ingredients. PS I have seen a chef use ground dried shiitake mushrooms in his ground beef mixture, I tried it once too and it definitely adds to The Umami. Cheers mate!!

Ambitious cook and it turned out great!! I was expecting some fish sauce to join the party. That's one of my favorite umami flavorings. I've taken to salting soups, stews, and chili with a few dashes of fish sauce before I add more salt. Definitely gives an umami kick.
