I just did my first painting with an acrylic underpainting for the first time (normally I'll just use one medium: oil, acrylic gouache etc) and it was very useful and interesting to work with it. When using cool underpainting or warm ?

You cover the background with an off-tone so that you can see the actual colours you paint over it and how they interact with other colours. Your eye picks it up differently. The old masters also did this to create a rich depth.
