Daniel, engineering manager at Masterbuilt, explains the charcoal hopper on the Masterbuilt Gravity Series Grill + Smoker.
From the Masterbuilt Product team on the hopper metal plates and firebricks:
Metal Plates
The metal plates in the lower portion of the hopper hold the firebrick in place and protect it during shipping. These burn out and drop into the ash pan. They are not necessary for the grill to function and we’re not offering a replacement part, since they are meant to be temporary.
Firebrick
In the Gravity Series Hopper, your fire is contained to a 6” - 12” area that is reinforced with a food-safe soft ceramic firebrick to handle the higher temps in the lower portion of the hopper. The ingredients in the food-safe ceramic are FDA allowed for use in food or as an indirect additive used in food contact.
The firebrick takes the heat from the charcoal fire and is to be replaced only once a hole burns in it that is more than 0.5” deep and 5” in diameter. These firebricks will be a warrantied part and will also available for purchase post-warranty at a retail of $29.99 for the full set (4 firebricks with temporary metal plates). In our testing, we’ve seen firebricks last multiple years. You do get some initial firebrick degradation during burn-in and initial usage, but then degradation tends to stabilize.

I have almost every type of smoker/grill that you can name. Ive been doing this for a while... Bought the 560 and my wife loves it. She shows interest in cooking outdoors now. She getting pretty good.

My ash area paint is peeling, and I think being blown all over the food.. Also uses 5x the amount of charcoal as my egg style bbq. Pieces of charcoal that fall through the charcoal grate is bit unreal. Many people have modified this grate so less good unburnt charcoal falls through. I spent $20 in charcoal on a 9hr cook at 225f

I bought the 4pk walmart stainless skewers and modified mine but now it holds a bit too much. I have to beat on it a bunch to get all the leftover ash to fall and use a couple fire starters to do a 2nd cook. So now I just don't fill the hopper to the top and it works better. It uses very little charcoal tho so you should probably do this if that is the main problem. It is all pretty minor, It is by far the best smoker I have and the easiest! You can set the temp and walk away. My offset smoker is all day feeding wood.

If you are not smoking and won't be putting wood chunks into the ash bucket, then yes I can see why you'd be surprised by the fall through. I have no issues with the amount that gets through using lump because of the amount of smoke I am getting from the hickory and pecan. YMMV

@@Shift4g FWIW I am using wood chunks on every cook in the ash bucket and I never light them and I have 4 skewers thru my grates and they are always burned up every time I check I add more. I think its a bit too aggressive of drop thru, but its just an opinion. Its like 4.00 for 4pcs of wal mart stainless skewers try it you will see. It still falls thru.

@@Shift4g It still gets thru fine even with 4 skewers i cut off after I inserted them. I just throw wood chunks in the bottom come back in a HR and throw more chunks in the bottom. LOL The hot ash drops smokes and lights them up!

@@PatriotPaulUSA how big are the chunks that you are using? I did the mod today with 4 skewers but i struggle to light them up or get smoke for the first 1.5 hrs. There were probably double the normal sift size. Before that i would have no problem getting smoke from the chunks in the ash tray

The included instruction manual states not to add charcoal at temperatures over 250-degrees as opening the top hatch can create a “torch” effect (increase of oxygen) and may inflict injury. Be safe out there!

My top slide gets stuck and is very hard to pull out. I have to basically get a pry to get it out. any recs to fix this issue?

It may just be a crushed part on the slide edge try a long thicker wedge shaped piece of metal and a flashlight looking down it and rebend it just slightly if that is it. If Not then you can start by dissassembling the heat sheilds then everything else around it. Once you get the chimney off you can see what is binding it.

I went to do my burn off and seasoning and even after shutdown it ans all vents and doors closed the charcoal continued to burn all night at around 250° - 300° ... it burn down 12 lbs of charcoal briquettes. Can I get a solution on what I see as a major issue. I see this as a reason to return this product for poor craftsmanship as many people have reported that there are "leaks" in the stack.

How do you start it and get it to temperature? I’m having issues getting things correct.

you say the 'fire is contained in a 5" area' but you don't say how. This is how charcoal starters work. You pile charcoal on top and light the bottom. The entire column of charcoal is soon blazing. I mean obviously it works or it wouldn't be sold. But it would be great if the pitch video explained how it keeps all the pieces of charcoal sitting immediately above and touching the burning coals from burning also.

I purchased the 1050 a couple of weeks ago,And my biggest problem is the larger shut down slide will not slide in, because it is being blocked by a piece of interior metal,And as a result I cannot not shut down my smoker,I have tried to reach master built and that has been a total disaster because they're not answering their phone or emails

Take it apart and figure out what is blocking it. That is what somebody is gonna have to do. Did you bend it over 90 Degrees when you assembled it?

Just increase the wall thickness of the burn chamber and or make it out of stainless at least .100 thick and this thing would be awesome. I will re sleeve mine someday when it burns thru to the firebrick. Most people cant easily do it. There are people charging a ton of money for a drop in sleeve already! It wouldnt cost much in China manufacturing and you can get rid of the cheap analog gauge to pay for it. Its Not necessary since it has a digital readout a foot away imho.

patriotpaul Totally agree with your comment. The analog gauge is silly, to be quite honest, but I guess they felt compelled to include a gauge in a grill. Can’t blame Masterbuilt, really. As for the fire box, I agree. Masterbuilt needs to make this more durable, but then again, it could be by design to get you to upgrade or replace your smoker in due time. To be honest, I’m not thrilled with the fire starter process. Seems clumsy, inefficient, difficult, almost cheap. There’s room for improvement here. Don’t get me wrong, I love my MBGS 1050 smoker! It’s early, but so far, so good!

@@gilguzman8359 Sure I can agree with that . I found some firestarters made of a thick fiberous paper material that have never let me down not 1 time. You break them apart and slide them in and light them Leave the door open and don't fill the charcoal to the top so it can get air throughout and every brand of charcoal lights for me. Its made by Rutland and called Firestarter squares www.rutland.com hope that helps somebody. I guess they could add a propane tank and igniter but again it just adds more cost that would be better spent on a heavier firebox.
