I cook it like rice, make idly, dosa, adai combining sprouts and vegetables, kanji with green gram etc...I use almost all the millets including ragi every day. Thank you Sujatha ma'am this recipe is different and too good.. will add ut to my list😂

Thanks Sujatha for this valuable recipe. You have focused on taste, nutrition and health for this recipe. Very useful. I have noticed that most millet have a glycemic index between 55 to 65. Ragi has GI 70. The difficulty for diabetics is to cut down carbs, increase fibre and increase protein and fat. Any form of sugar/carb (coconut milk, jaggery) when added additionally increases blood sugar spiking. Can we get recipes with Barnyard millet where we add more ingredients which will increase fibre and not sugar or carb?

Mam one thing to ask that it’s advisable to replace millets in place of wheat for gluten intolerance people I think in any recipe will be good without mixing wheat

As far as I have heard from Millet man of India Dr. Khader valii Sir, millets have to soaked for 6 to 8 hrs because of their high fiber content and Palm Jaggery is the better option over cane Jaggery.

Madam have heard that millets or Sri dhandya are supposed to be soaked for 6 to 8 hrs for better digestion and assimilation ..wanted to know whether the barnyard millet used by you was already soaked and dried ....a ready to use one or it's okay to use as shown by you madam

Consult a doctor and take a course of probiotics. It really helps gut healing. Meanwhile avoid nonvegetarian food, alcoholic beverages, carbonated beverages, processed maida based food etc. Minimise gluten and dairy. Have plenty of fresh fruits and vegetables. from wikipedia: Echinochloa frumentacea (Indian barnyard millet, sawa millet, or billion dollar grass) is a species of Echinochloa. Both Echinochloa frumentacea and E. esculenta are called Japanese millet. This millet is widely grown as a cereal in India, Pakistan, and Nepal. Its wild ancestor is the tropical grass Echinochloa colona, but the exact date or region of domestication is uncertain. It is cultivated on marginal lands where rice and other crops will not grow well. The grains are cooked in water, like rice, or boiled with milk and sugar. Sometimes it is fermented to make beer. While also being part of staple diet for some communities in India, these seeds are, in particular, (cooked and) eaten during religious fasting (willingly abstaining from some types of food / food ingredients). For this reason, these seeds are commonly also referred to as "vrat ke chawal" in Hindi (i.e., "rice for fasting", literally). Some suggestions. Avoid nonvegetarian food, alcoholic beverages, carbonated sugary beverages, processed maida based food like bread, pizza, pasta, noodles etc. Initially start having tender coconut water daily. Helps heal the stomach. Soft food like idli, moong kichdi, upma with veges etc. Pomegranate helps heal the gut. Fruits like banana, papaya, chikoo, watermelon is good. Pumpkin, ashgourds, carrots, beetroots etc are also good. Can suggest an antioxidant supplement to heal the gut. Start with a small quantity. Cook it soft like rice. Have a small portion for lunch,till gut improves. Start with the positive millets like kodo, little, foxtail, barnyard and brown top. Soak for minimum three to four hours. In general 3.5 cups water to 1 cup millet, pressure cook for about three whistles and then on sim flame for about 5 to 8 minutes. Start with one millet at a time. Use one millet continuously for a week and then second week change to a new millet. Regards Sujata from Munch and Mull

when i soak ragi frains , iam getting parboiled i dont know thats the one are availabe to make dosa , idli when i soak it doesnt get soaked well neither grinds well the problem us only with ragi grains is it becoz they are parboiled, i m in uUS online i am getting this

You have roasted to reduce phytic acids. This you have done without washing the millet. If I have to make a pulao then I have to wash the millet and then cook, in that case how do I roast it to remove the phytic acid? Pls let me know.
