UPSIDE-DOWN CAKE WITH PEACHES
(serves 10 - prep 25mins - cook time 45 mins)
Ingredients:
- 250g butter
- 1 cup sugar ( any sugar is okay)
- 3 eggs
- 2 cups SR flour ( self-raising flour )
- 3/4 cup milk ( any milk ,almond milk, soy...)
- 1 tsp vanilla essence
- 5- 6 peaches
Step-by-step:
1. Preheat oven on 180c, you can choose to either grease the tin or place baking paper in order to avoid sticking, however if you use baking paper you must still grease it. Add extra sugar to the tin for glazing.
2. Cut peaches in equal size and shape so you can arrange them over the base of a tin. ( You can do this with other fruits, I find that firmer fruits such as pears, nectarines, berries, apples... work best )

3. Mix butter and sugar together until it is pale and creamy
4. Add eggs - mix in one at the time
5. Gently add in flour, milk and vanilla essence
6. Spread the batter over the peaches and even the surface
7. Bake for 45 mins on preheated oven on 180c
8. When baked wait for 5 minutes to cool down and then flip over
9. When the cake has cooled off, sprinkle over with icing sugar
(optional)
10. serve with whipped cream, ice-cream or a coffee and enjoy ;)
