📌 Ingredients for 8 servings
(round pan 24 cm or square 21x21 cm)
4 eggs
120 g flour type 000
120 g butter 82% fat
120 g of sugar
500 ml milk (3.5% fat)
2 teaspoons of vanilla extract
1 teaspoon grated lemon peel
a pinch of salt

🔪 Preparation
Preparations: melt the butter and let it cool. If necessary, heat the milk a little now as well. Separate the eggs. Put the egg whites and yolks in two different bowls.
Put the sugar on top of the yolks and mix until they lighten in color and increase in volume.
Add the melted butter, vanilla and grated lemon zest and mix until smooth.
Sift the flour and incorporate it briefly with the mixer, then pour in the milk a little at a time and mix for 1 minute, just until you have a homogeneous mixture.
Put the salt over the egg whites and mix until you get a firm foam that does not fall off the egg whites.
Gradually fold the egg whites into the yolk mixture. Mix gently with a spatula. In the end you will get an almost liquid dough, in which you can still see small piles of egg white.
Pour the composition into the pan lined with baking paper and bake the cake at 160 C for 50-60 minutes. The oven must be preheated! When ready, the cake should be lightly browned, well set but still soft in the middle.
Turn off the oven and let the cake cool for 30 minutes with the oven door open. Then move the pan to the counter and let the cake cool completely.
Cover the pan with a lid or cling film and refrigerate the cake for at least 4 hours or overnight.
Remove the cake from the pan by using the baking paper or turn it over onto a plate and then once again onto another plate so that it ends up face up.
Serve the smart cake dusted with sugar or decorated with natural whipped cream, fruit, etc.
