One can tell he enjoys to taste. Full tablespoon of tartar in his mouth! These are great episodes. More of this please, keep em coming.

I think he added more veal because he took such a big spoonful to taste earlier lol

He served the left over veal after his 2 massive spoonfuls during the tasting. Thank you for thinking of the diner. Very considerate Chef.

He added more veal because he massively overdressed the original portion with sour cream. It was too wet so he added more, adjusted the seasoning, took another mouthful and then arrived at the proper ratio.

Not my style but for a few minutes there I thoughy the chef was just gonna lose it, eat the whole bowl, then tip back his head and suck down the caviar with some champagne he had stashed under the shelf. Lol. Seriously, it is a beaautiful preparation but not my ballpark.

Dependimg thenrules and regulations in the country of the cook. He’s washing his hand more often than nec. And without gloves you can feelmwhen your hands are dirty and clean them. With gloves this feeling is gone.

Honestly, I like a bit of bite to my tartare, but this is of course a matter of personal taste. However, from a flavor standpoint, I thought the dish looked lovely! That cauliflower creme was such an original idea on his part. It adds a creamy mouthfeel but without any overwhelming richness, and the inherent earthiness of the vegetable is a nice pairing for the rest of the strong flavors in the dish.
