Ingredients
Maida - 3 cup
Water - 1 cup plus 3 tbsp
Salt-
Little Maida for dusting
Sugar -1 tbsp
Oil -2 tbsp
Oil for extra use
Method
Take 3 cups of maida to a big bowl. Add salt. Mix. Add 1 tbsp sugar. Mix . Add 2 tbsp of oil. Mix well. Add water in batches. Mix to make a soft dough. Grease your hands with oil and mix well. Mix the dough for 10 mins. Keep the dough for 1 hour. spread the oil on top of the dough. Cover the bowl with a wet towel. Close the bowl with a plate. After 1 hour, divide it into 9 to 10 pieces. Spread the dough balls individually with your hands (watch 7:40 mins) and keep it to rest for 30 mins. Then brush oil on each ball. Cover it with a table cloth. Grease the table top. And take a dough ball and spread the ball on the table top with your fingers/palm. Make it as big as you can. (watch 10:19 mins). Make it as thin as possible.brush some oil . with the tip of the knife make long straight cuts. Then bring both ends together to the center and make It a long string. Then pull the string (as shown 12:35 mins) catching on both ends. Roll the string in concentric circles. Keep it aside for 20 mins after brushing oil on top. Cover it with a towel. With your fingers spread the paratha to a preferred size. Cook the paratha on the tawa. Grease the tawa before adding the paratha. After you see a brown on the sides. You can turn the paratha. Cover the done paratha in a dry towel. After all the parathas are done we need to keep it in between our hands and beat it well to make it real flaky.
