Ingredients for the salad with roasted eggplants and peppers:
- 1 kg of roasted eggplants, peeled and well drained;
- 250 gr of roasted and peeled Kapia peppers;
- 100 gr of finely chopped onion;
- 4 cloves of garlic;
- 1 teaspoon of salt, or to taste;
- juice from half a lemon;
- leaves from a bunch of parsley;
- 200 ml of olive oil or sunflower oil;
