Mapo tofu is a famous Chinese delicacy hailing from the heart of Sichuan cuisine. This mouthwatering dish combines the delicate silkiness of tofu with a savory punch of minced meat. However, for our vegetarian twist, we swap out the meat and bring in the earthy delight of mushrooms. If you're after a heartier protein, soy crumbles make for an excellent substitute. The result is a symphony of flavors and textures that'll have your taste buds dancing with delight.
Adding a spoon or two of Mapo tofu to steamed rice makes for a great start to a satisfying meal. However, at home, Mapo tofu alone can be a quick and convenient dinner option. It's a speedy and straightforward choice when you need to prepare dinner in a hurry. Despite its rich flavors, it's easy to make, and even beginners can succeed. You may need to visit an Asian grocery store for some necessary ingredients, but some can also be found in regular supermarkets.

Vegan Recipe | EASY MAPO TOFU [How to cook silken tofu without breaking it]
Ingredients:
(2 servings)
400g soft tofu / silken tofu
100 g chanterelles mushrooms (or other mushrooms)
100 g mushrooms
1 green onions
4 garlic cloves
one small piece of ginger
2 tbsp broad bean chili sauce
2 tsp sichuan peppercorns
200 ml vegetarian stock or water
1 tbsp light soy sauce
1 tsp sugar
1 tsp salt
1 tbsp cornstarch,3 tbsp water

Perfect reminder, that I need to cook mapo tofu again. Havent had it for too long. And using mushrooms as a meat substitute is definitly my favorite here. :)

We made this last night - absolutely delicious! We didn’t have mushrooms so we subbed for 150g of beluga lentils and it easily served two! Thanks again Yaxin, x

Now I have to go back to the store and get that Broad Bean paste I put back on the shelf because I surely did not know what to do with it.. but I knew I wanted to try... Maps Tofu has been on my list of foods to tey for a ling time now.. Thanks for sharing your recipe 😊

Thank you very much for your feedback! This sauce is really unique because it's made from fermented beans, and it has a strong flavor. It's a bit salty, a bit spicy, and very umami. Because it contains some larger pieces of chili skin, I like to chop it up a bit before using it to improve the texture. I hope to hear your thoughts after you try it!

Das freut mich sehr! Bei diesem Mapo-Tofu-Gericht kann sowohl fester Tofu als auch Seidentofu verwendet werden, und der Geschmack variiert tatsächlich erheblich. Beide Varianten mag ich sehr. Wenn es möglich ist, probiere beide Varianten aus, dann wirst du deinen eigenen Geschmack finden:-))!

Das sieht SEHR lecker aus.Ich habe immer gedacht,Seiden-Tofu ist typisch japanisch.Als Bestandteil von Suppen.Oder kommt Seiden-Tofu ursprünglich auch aus China? Vielen Dank für dieses Rezept 🙏

In meiner Kindheit habe ich schon Seidentofu gegessen. In China gibt es eine große Vielfalt an Sojaprodukten, darunter verschiedene Arten von Tofu mit unterschiedlicher Festigkeit. Die Menschen wählen je nach ihren Vorlieben aus, um unterschiedliche Gerichte zuzubereiten. Seidentofu wird normalerweise für Salate, Dampfgerichte und Suppen verwendet. Bei diesem Mapo-Tofu-Gericht kann sowohl fester Tofu als auch Seidentofu verwendet werden, und der Geschmack variiert tatsächlich erheblich. Beide Varianten mag ich sehr.
