Last summer I was busy building a goat pen for my new goats, so I didn’t have time to process all of my tomatoes from the garden. I have a lot of frozen tomatoes from last summer, and I need freezer space, so today I am making and canning Rotel style tomatoes with green chiles and Hatch green chiles.
Ingredients:
12 cups peeled, cored and coarsely chopped
Up to 1 cup chopped chili peppers - I used Hatch, Anaheim, and Jalapeño
1 Tbsp canning salt
1/2 tsp coriander Powder
1/4 tsp citric acid added directly to pint jar - 1/2 tsp for quarts
OR
1 Tbsp bottled lemon juice for pints, 2 Tbsp for quarts
