Victoria Sponge Cake /Sponge Cake
An easy sponge cake recipe, you can serve it plain sandwiched with jam to make an easy sponge cake, or fill with buttercream for a happy birthday cake.
4 Large Egg Whites (120 grams)
1 teaspoon Vinegar
120 grams Fine Sugar
4 Large Egg Yolks (72 grams)
120 grams Plain Flour
1/4 teaspoon Salt
30 grams Oil (30 ml.)
40 grams Milk (40 ml.)
1/2 Teaspoon Vanilla Essence
Pan Size: 18 cm
Oven Temperature:350 F for 30-40 minutes

I tried this Cake, it turned out super soft and yummy, thanks for the lovely recipe...I also added 1/2 tsp of baking powder, and also increased the amount of sugar and milk a bit.

I have tried this recipe so many times and it came out really well. I use this recipe for all my sponge cake based cakes 😊😊 at that time I didn't log in and I lost this video link. Then found out to say thanks to you. You explain really well 😊

Thank you so much for this lovely recipe . As always you were clear and reliable. I on the other hand made stupid mistakes but by the mercy of the cake Gods, it didn't turn out to be a disaster. Notes to self: 1. Used 1tsp cream of tartar. Whipped up Egg whites taste little bitter in places but no taste of it in cake. 2. used 30gm of ghee instead of oil just as an experiment. Ghee wasn't mixing well so had to use electric beater to cream up yolks and ghee. Then added only 2 tblespn of powdered sugar (see why below). Also added 1 tsp powdered cinnamon instead of vanilla 3. (Mistake#1!), when beating up egg whites I added all the powdered sugar (had just made meringue, so thought it would be the same technique!). 4. obviously didn't have any sugar to mix with egg yolk and flour. So the flour egg yolk mix was very stiff. The 2 tblespn of additional sugar was not enough to loosen it, so added 30gm more milk! Now it was less stiff and so more easy to mix in with egg whites. 5. Since there was more fluid in the cake now, used a bigger cake tin (glass put in bottom row of OTG). Cooking time remained exactly same. Came out light as air and very delicious. Not over sweet. Cinnamon tasting, not eggy.

Amazing recipes. I baked sponge cake yesterday. It came out soooper. It's like angel cake. It's feather soft and pale cream colour. Oh... Great. Your presentation s great.

Hi Bincy. Thank you for such amazing recipes. I have tried a few now and they are all so good. Can you please tell me if I used cake flour do I need to alter any other ingredients and if i put this in a 9 inch pan will I need to adjust the cooking time or amount of ingredients? There are so many recipes out there but I really want to try this one for my daughter birthday cake because so far I have not had a problem with any of your recipes and the way you explain the instructions makes it so easy to follow. This is not a sponge cake this is a chiffon cake. A chiffon cake is a very light cake made with vegetable oil, eggs, sugar, flour, baking powder, and flavorings. It is a combination of both butter and foam type (sponge type) cakes.Instead of the traditional cake ingredient butter or paste (such as shortening), vegetable oil is used; but this is difficult to beat enough air into. Therefore, chiffon cakes, like angel cakes and other foam cakes, achieve a fluffy texture by having egg whites beaten until stiff and folded them into the cake batter before baking. Its aeration properties rely on both the quality of the meringue and the chemical leaveners. Its oil-based batter is initially blended before folding into the meringue.

And yes I did this which came out soo soo sooo perfectly which i was searching for no. Of days. Vanilla sponge cake which I prepare will turn out slight rubbery according to other recipes even if i follow them clearly. ( 1cup flour, 3/4 cup Sugar, 1/4 cup oil, 3 Eggs)But this will be awsome if we do the cream on this sponge😋😋Waaow😘 Thanks Bincy a lot which I really mean it😄. And a small doubt, can we make chocolate cake out of this recipe??

Mam, can I use baking soda instead of baking powder? If use, then will i use it only soda or I'll have to use it with lemon juice?

Hi Alexandria,In this recipe,we don't need baking powder or baking soda.we depend on the egg whites for all those sponginess. About baking powder and baking soda, When a recipe calls for baking soda (BASE), it usually calls for some type of ACID. Like buttermilk, brown sugar, yogurt, lemon juice, vinegar, cream of tartar, molasses, applesauce etc. You need this ACID in the recipe to react with the baking soda, which in turn creates carbon dioxide and allows your baked good to rise. Baking powder on the other hand, is actually a combination of baking soda plus another acid, in the presence of an inert stabilizer (a fancy term for an inactive ingredient that keeps the mixture from reacting), which is often a bit of cornstarch. So we don't need to add an extra acidic ingredient in this case. Hope this helps :)

I tried your chiffon cake also but the cake didn't rise much and it was a bit compact and dense tasted good and soft and springy though. what did you think I did wrong?

Sorry to hear, the cake didn't rise well. Much of the cellular structure of the cake is derived from egg proteins and they are classically leavened by steam and air from beaten eggs.The probable reason for dense and compact texture of sponge cake is related with the leavening (egg white foam).May be the egg whites were not properly foamed or may be the batter got overmixed...These are the only two reasons i could guess ..Hope this can help you to make wonderful cake next time.

Actually we dont need self raising flour..but if you dont have plain flour, you can use self raising flour.The cake will come out very soft and spongy.

Hi Ansha,120 gms is approximately 2 tablespoon less from 1 cup(in my cup 1 cup flour is 150 gms...) .And sugar 120 gms is, approximately 1 tablespoon added to 1/2 cup.

You can use any vegetable oil like sunflower oil,corn oil etc ; preferably flavorless oil..

I tried out this recipe. It came out good. It was soft. But I felt egg smell was there.. what may have gone wrong?

Hi Narmadha, I am happy that you made soft and fluffy sponge cake :) As we are using four eggs in this recipe,there will be little egg smell which is quite normal.Allmost all the sponge cake recipes which calls for eggs to create the fluffy texture, will have that little eggy smell.But if you find it difficult,then you can add little more vanilla extract(1 teaspoon) to the cake; as we are using only half a teaspoon in this recipe.Another option is to use orange or lemon zest to get rid of that eggy smell. Hi Pooja, Just substitute 2 tablespoons of flour with cocoa powder.In this recipe instead of 120 gms of flour,take 90 gms of flour and 30 gms of cocoa powder. All the best for making wonderful chocolate sponge cake :)

Is it a pinch of salt or 1/2 teaspoon of salt to be added? I’m confused as on the description it’s written 1/2 teaspoon. Thanks 🙂

Hi Lisy, :) The confusion was because i used a good pinch of salt and the original recipe suggests 1/2 teaspoon.It was fine with a pinch of salt .I will change the ingredients in the description box to 1/4 tsp.

What is the size of the pan ?and is it needed baking powder?

Hi Elsa,my cake pan is 18 cm/7 inches diameter and 6 cm/2.3 inches height.In this recipe we don't need to add baking powder. Good Luck to you :)

How to avoid the cracked top?

Hi Rabeena,Till now i could not figure out what exactly causes the "cracked top ". The cracked top may be because,the oven is probably too hot. This can cause the outside of the cake to cook faster than the inside, creating cracks. If you suspect this could be an issue, check the accuracy of your oven with a good oven thermometer. Good Luck!

With a cake that gets all of its volume from the whipping of eggs, there’s really no way to avoid the cracking without sacrificing the volume and fluffy texture. It’s part of the cakes charm.
