She's At It Again

A side dish that will be a favorite for sure, this onion casserole resembles a pasta dish. (So much so that people at potluck dinners will be searching out who brought it!). Vidalia onions are preferred but if you cannot locate Vidalias then by all means feel free to use sweet yellow onions. Enjoy!
Sweet Vidalia Onion Casserole
1 Tbsp butter (plus more for later)
3-4 large Vidalia onions, sliced thinly
12 ounces cream cheese, cubed
2/3 c real sour cream
3 eggs, beaten
1 tsp hot sauce ( whatever your favorite is)
4 ounces shredded Swiss cheese
4 ounces shredded Monterey Jack cheese
1 1/4 c crushed buttery crackers
1/4 c butter, melted
2 Tbsp freshly grated Parmesan cheese
In a large skillet saute' onion slices in the 1 Tbsp butter until they're soft and transparent. Remove from heat and stir in cream cheese, sour cream, eggs and hot sauce; mix well and pour into a buttered baking dish that will hold 2 quarts. In a mixing bowl combine the melted 1/4 c butter, Parmesan cheese and the crushed crackers: mix well and pour over the onion mixture. Bake in a preheated 350° oven for 30 minutes. This makes enough for about 12 side servings. Enjoy!

I’ve never heard of Vadalia Onion Casserole before but it sure looks yummy! This week at the store, I bought a bunch of sweet onions because they looked good but had no plan for what I was going to do with them. Well, I now know exactly what I’ll be making with them😊. Thanks for sharing!

This looks fabulous 😍 I subscribed as soon as you cleaned your bowls as you poured them into the next! LOL I can't stand fake videos that throw away half the ingredients just to make a video. You know they don't do that in their own kitchen, and if they do then they aren't my kind of people 😉

Thanks for saying that! Give you exact measurements, leave unmixed crap on side of the bowl, then scrape everything out with a spoon for god’s sake!

Thank you for sharing that yummy looking artery clogging dish! I love onions and cheese. The brisket and brussel sprouts looked great too. I'm gonna have to try this soon.

I absolutely LOVE onions, and this recipe looks awesome! I will definitely make this one. It looks fabulously rich with all of the cheeses, sour cream and eggs! Stand the grater up on the board and go up & down, much easier than pushing the cheese against it and having to counter the push with your opposite hand.

This grater is a bit wonky; it survived our house fire and bends easily when I stand it up, thus I continue to build muscles the hard way. 😆

It’s not spicy at all; probably just gives it a pleasant salt flavor more than anything. I’m so glad you’re gonna try it; I think you’ll like it a lot! Warning: it looks like pasta in the serving dish. 😆

Hi I was wondering if i only have yellow onion can I add sone green onions to it and a little salt and black pepper to the oniopns whiles they are cooking for a little more flavor or is the salt in the cheeses enough to flavor the cheese? Thanks

I’ve actually used yellow onions in place of the Vidalia onions when they were not available and it turned out great. Not sure how the green onions would taste since this is really a sweet onion dish but if you try it and it’s better than min be sure and let me know! I’m always up for something new! 😊

Could I substitute thawed from frozen pearl onions for this recipe? How many 12 oz bags would you recommend?

I can’t recommend this simply because VIDALIA onions have a much sweeter flavor than other onions but you could always give it a try! VIDALIA onions are rather large and I’m guessing they might be around 8-12 ounces each (obviously it varies) so if you’re really brave you can shoot for 4 of those 12 ounce bags. Let us know how it turns out!
