Vietnamese immigrants introduced North America to the wonders of pho and banh mi, I'd say sharing slow-smoked ribs and mac 'n' cheese is the LEAST we can do. Cultural exchange is a glorious thing.

I actually would say that is unusual for Asian people. My wife is Vietnamese and I myself have worked with a lot of Asian people. Aside from cheese on a pizza, none of them have liked cheese.

@@DrFunk-rk6yl As I said she is Japanese, born and raised in Okayama prefecture, Japan. I'd say the cheese thing is more that it is not a component of traditional cooking there, so cheese is not very good, or it is very expensive when imported from Europe. But given the chance my in-laws happily ate cheese I got for them.

Try using rum when you cook. I also use wine, beer, tequila, marsala, brandy or whatever the wife has in the house. I don't drink but I will cook with it. You'd also be surprised at the gravy you can make...

They all speak very good US English, and surprisingly free of notable accent. When I was young, Vietnamese mostly spoke French as their second (or third) language. Obviously that has changed.

Kiing milli. I've got news for you. Some Americans eat Squirrels which are also rodents and a lot bigger than rats. The birds and squirrels in our yard love donuts with Caramel icing. I feed them cooked organic brown rice when I run out of bird seeds.

What the owner has done is incredibly smart mixing some local flavours with the food he loves. You see he has put in a hell of a lot of work in to that place, you can tell by the equipment in the kitchen, the products his using, how professional his staff are. It's very difficult to source the ingredients to produce western food to this standard in Asia. It's VERY impressive work.

Ate here couple times, never got out of the place with any room left in my stomach. There are plenty of place serve American bbq, but this place is the best and the most genuine. Still this food is considered pretty fancy in Vietnam. You can buy tens decent meals or more with the price of those big ribs

Yeah. BBQ is always expensive because of the time investment. It takes many hours or even days to prep and cook low & slow BBQ.

not true. Regular food cooked to order requires a large kitchen staff. Some of the best bbq is sold in tiny shacks. 1-2 guys could cook for 100s of ppl.

Texas bbq is just normal American bbq. It developed throughout a large swath of the States basically the same. Probably due to moving cattle herds west for shipping. I wonder if Florida even has any Yellowhead swamp cows left in the wild.

I LOVE American-Style SpareRibs that are served here in NRW Germany (area of Dortmund) they are soooo good. Favorite food.

Actually, there's kinds of American bbq ribs. St. Louis style, Kansas City style, and Memphis style. Each boast their's is the best but, truthfully it's all good if it's done properly. There's also Texas bbq, which focuses MOSTLY on beef and the most famous of it, is the Texas beef brisket.

This was fun. about 6 years ago I was back in Bangkok visiting friends and they asked me to do some Eastern North Carolina Cue. I cook whole hog back home. Got some butts and between a grill and an oven did a little bit of justic to the pig. Made a traditional Eastern NC (not western) vinegar sauce and my friends enjoyed, it had been a few years since they had any que. My Thai ex-Girlfriend was there (inviteed her for old times), she asked me if would cook some ribs at her bar. The first time I got pretty tickled I went to sauce the ribs and the girls scattered, they thought the grill was going to blow up, but later I pulled the ribs, served the staff and watch a pretty extentive conversation about the ribs. I did get a thumbs up. Ahh, good times. I havn't been to this eatery in Hanoi, but on my list the next time I'm on that side of the world. Well Done!!

Real American BBQ, and I mean REAL American BBQ, is such a culinary delight, much like ramen in Japan, beef bourguinon in France, sisig in the Philippines, biryani in India and Pakistan, etc. It requires a lot of prep work and is incredibly time consuming. American food has been characterized as fast and easy. But American BBQ takes much time and effort to prepare that very few would dare make it at home because it's just so consuming -- you might as well just find a place that serves the real deal. From the spice rub, wood chips used for smoking, smoking period, glaze, the amount of caramelization from grilling. When you're building up that many flavors, they better work with one another.

The philosophy is "slow and low" and its very regionalized. In Texas they get a Germanic/ Spanish influence. The philosophy in Lockhart, TX (some of the most notable in the state) is that the meat is so well cured and seasoned, sauce isn't needed and it lives up to that.
