I am experimenting more with bringing international dishes into my cooking. I already love all of the spices, the chilies, and the oils, so I think that this is something I would love to try. My Indonesian stepmother used to cook a smelt with spices and serve (with rice) something similar to this, but she would also serve smelt deep fried. Either way, I know she soaked it in milk for a while before cooking. She just said it was to help clean the fish. It was a very good dish!
