Here we are with the 2nd Part of me reacting to mean comments on Reddit.
Thanks to everyone for sharing their opinion, whether positive or negative. All those mean and offensive comments won't get me down, but I'll take it all in to try to improve, because I always want to be better.
A lot of people should learn to respect others, like I ALWAYS do in my videos!

Thank you Vincenzo for being an advocate for trational Italian cuisine! I was born and grew up in Canada to 2 Italian parents who were originally from Molise. My mother cooked everything in the most traditional way. My Father grew tomatoes and green beans in our garden along with garlic, onions, lettuce, carrots, basil and parsley. Rarely used anything that came in a can or a box. The cantina always had jars of tomato sauce (from our garden tomatoes), home grown garlic, prosciutto and sausage hanging from the ceiling. This is my long winded way of telling you that if one has not grown up and experienced the Italian way of life and the gathering at the table of family around a deliciously prepared traditional Italian meal they will never really appreciate the message you convey. Keep doing what you are doing you are definitely on the right track.

I was a moderator of a subreddit with over 220k followers about 2 years ago. I completely deleted the subreddit, my account, and haven’t looked back in two years. Reddit commenters are the most rude, self-righteous, and unmerciful people on the World Wide Web. I love you Vincenzo! Your reaction videos are comedy and show me how bad some people are in a funny way. Your videos with Johnny KILL me 😂 Especially the “most viewed Neapolitan pizza video on the internet review with Johnny” I can watch it over and over. 😂 You two are amazing. Keep up the good work!

+ markm4216 Which is why he NEEDS to get away from Reditt. Cancel it. It is toxic and he needs to know what kind of people are on it. I can see it has lowered his spirits and not the same vincenzo- Like part of his soul got sucked away. I too quit it (like 7 years ago) and never looked back without regrets.

@@Magu1987Modern Polish cuisine owes a lot to the Italians! During the renaissance, the King of Poland married an Italian noblewoman, and she brought her chefs along with her and they made quite the impression in the royal kitchen. Even today the Polish word for the mirepoix/soffritto/trinity is "włoszczyzna" because of that early Italian influence.

I'm Italian-American and my mother was born in the Tuscany region. I grew up eating real, traditional and rustic Italian food and I appreciate your channel for promoting and teaching authenticity. Most Americans don't understand real Italian cooking. They think Olive Garden is good. Keep doing what you are doing and ignore the trolls. It boggles my mind why people will post such hate over something they don't have to see or hear. Skip it if you don't like it... no-one is forcing it on you.

I have learned lots from Vincenzo’s Plate. 8 months ago, I was barely surviving on instant noodles and unhealthy takeout food. Thanks to Vincenzo’s clear and easy-to-follow recipes, I now have a steady rotation to feed myself and have fun cooking. Although some ingredients may be pricey, I have no regrets learning from this channel. Simplicity at its best! 👍🏻

I LOVE your personality! You have so much character that comes across as natural, not forced. It’s a great thing to have when you do this for a living AND when you’re teaching and sharing your knowledge with viewers. I know you know what you’re doing and I feel like people sometimes don’t take the time to understand what is being said. I think if they did, they wouldn’t get so upset and post negative things. I’m glad you’re clarifying because I think and hope it will help them understand. I appreciate the time and effort you put into making your videos! They are educational and very entertaining! I wonder how many of the people being against your traditional way are usually angry about "cultural appropriation"... You are showing how the food in Italy is most of the time done (of course every Nonna makes it a bit different), but if you know real Italian food in Italy, you know how it should taste. And I appreciate especially that! The best way is usually the traditional way in every culture's cuisine! You are passionate about "your" food - that is great and should be what people should be like!

You're right and Italian food is always something of an argument because traditionally what was available in Northern Italy was different from what was available in Southern Italy leading to variations on lots of food.

I can understand why people are put off by his purist attitude, but that’s why I like him. He’s protecting the culture. That being said, food evolves. Traditional isn’t always best.

But remember that just about anything considered to be a "classic" Italian dish is about 100-150 years old generally, some with roots going back as far as 200 to 300 years MAYBE, but nothing made in Italy today by even the oldest Nonna would be recognizable to an Italian person prior to like 1850. And that makes those "classics" about the same age as most of the "fake Italian food" dishes that Vincenzo loves to deride. This reminds me of a criticism I hear a lot from Irish people -- "People in Ireland don't eat corned beef and cabbage! Americans are so dumb!" Irish Americans do NOT think people eat corned beef and cabbage in Ireland, nor do we care. Corned beef and cabbage is a part of OUR heritage as Irish-Americans, because it was an important part of OUR early history in this country. It doesn't have to be like Irish food to be valid. People in other countries are allowed to have their own cultures. And yes, that includes Americans. Vincenzo is "proud of his culture." Ok, that's great! I wish he'd be more conscious of the fact that people in other countries are also proud of their cultures. Italian-American food is NOT "fake Italian food." It is ITALIAN-AMERICAN food. And maybe if he actually ate some real Italian-American food, instead of gagging on canned spaghetti or yelling about pineapple on pizza, he'd respect it more. Like what is his obsession with chicken in alfredo? I've been living in an Italian neighborhood in New Jersey for...25 years now? NO ONE puts chicken in alfredo sauce. In fact you'll rarely see "alfredo sauce" at all. You know what's popular here? Pasta in broccoli and oil, very similar to the dish he showed in this video. We usually put walnuts in it. I've suggested to Vincenzo a dozen different REAL Italian-American dishes he could try. But he isn't going to do that, it seems. He'd rather make fun of things that sound like they came from an Olive Garden lunch menu, and sneeringly call it "Italian-American." It IS insulting, yeah. I've always been a little bit insulted about it, but enjoyed his videos anyway. But the more he reads these mean comments and angrily defends his right to be rude...well, the more insulted I feel.

@@Revelwoodie but why? I grew up in NJ, I'm 5th gen Italian-American and he's not wrong, the dishes we make here are indeed different if for no other reason than availability. We just simply don't have the same ingredients as readily available but with food, we often have some dishes we grew up with and that's what we're used to or have developed a taste for. If I tried eating a can of Chef Boyardee, I'd gag on it, too just the smell of that stuff is gag worthy, imo. I'd have a similar reaction to mass produced, store bought tomato sauce because I've been eating homemade my whole life which sometimes makes me seem like a purist, especially when trying to eat at someone else's house or worse still, a pot luck. For someone who's been eating Italian food and not Italian-American food, I'd be more surprised if Vincenzo actually liked IA recipes but considering he's in Australia, his food availability differs greatly from ours anyway. If someone likes their Prego sauce and pre-made, frozen meatballs, I don't see the appeal but good for them, it's not authentic by any stretch but Vincenzo isn't trying to take the food off their plates, he's an opinionated guy who's used to better quality, homemade food, a lot of people from other countries find the stereotypical American food that you buy pre-made and massed produced unappealing, a growing number of Americans find it unappealing, too.

It's a bit like in all things and with all the people who deal with the public. It's like this with artists (singers, actors, etc.). It's like this with politicians and so on. There are those who tell you "bravissimo” and there are those who tell you that "you suck". Let's say that if everyone likes one, there is something that isn't right. You can't please everyone !

When I watch Vincenzo’s plate I always watch the cooking videos instead of the reaction videos because the reaction vids are a bit too over the top for me but the cooking videos are a masterpiece and feels genuine to me

It's not even gatekeeping. If you take a recipe that has 4 ingredients, change 2 of them and add 4 more, it's a different dish. It may be good, you may like it (which is the most important thing; you are the one who's going to eat it after all), just call it something different if you're making a video about it.

Thank you for sharing your Italian culture with me and explaining why and how things are done. Your videos have helped me to improve my dishes. The combining of the sauce and noodles in the pan right before serving, for example, has been a great technique. Keep up the good work. These trolls are just that.

I commented on your first video that you shouldn't let people's opinions bother you. Whether it's in writing on Reddit or whether they are just thinking it to themselves, people will always make judgements and have opinions and you can't control much about that or please everybody. If you're actually going to be reading comments about you, you should approach them with an open mind, not to try to justify or defend yourself. You even made a part 2, I hope you're actually letting these comments bother you! Just be you, still to your values, and do what makes you happy :)

I absolutely love your content most times, especially your recipe videos! You have definitely taught me quite a bit, and that's so appreciated - especially as an American with Italian heritage. I think where people get turned off is sometimes how strongly you react to certain things. You have to understand that, often, Italian-Americans (especially today's generation) are just doing what they were taught by their predecessors who were, themselves, sometimes a generation or more removed from Italy. Culture shifts over time based on many things, including necessity. But people in the USA are very, VERY proud of what they feel is Italian culture. And I think, to that one commenter's point, there's often room for both. And that's what I love about your videos that aim to truly teach these points gently - you can show that while their way may not be the traditional way, that doesn't mean it's BAD - just that it's inauthentic to how things have been or are currently done in Italy. For example, I grew up going to my nonna's house every Sunday and having meatballs and pasta with a red sauce. This was a recipe she got from her Sicilian mother and adjusted to her liking. It would not at all be considered an authentic sugo, but it's delicious. The reason I love your channel is because, although I learned to make things like carbonara or alfredo from American recipes (not my nonna's), I didn't know any better, so learning the actual authentic recipe has made me feel even closer to my heritage. That doesn't mean I'm not proud of the things which make me an Italian-American, as well. I think sometimes your classic Italian passion can get misconstrued, so a gentler delivery may sometimes be helpful. Recognizing that just because something isn't authentic doesn't mean it's not good has helped me, too. The American take on Carbonara, with cream and peas, is still very tasty - but I agree, it should be called something different (and it certainly doesn't hold a candle to ACTUAL Carbonara). But people shouldn't be punished or flamed simply for not knowing. That's why I like your educational stuff more, but I get a kick out of your reaction videos, too - it's just that sometimes people can feel like it's gatekeeping. If a dish is tasty, and prepared WELL, then to each their own. So a gentle reminder that it shouldn't be called "authentic", or a gentle education on what the authentic recipe actually is should be all people need - and you do that most of the times. Keep it up, ignore Reddit, but keep in mind that most of the time people aren't purposefully trying to deface or degrade Italian culture or recipes - they simply don't know better, and that's why it's awesome that you educate them! Love your stuff! Keep it up e grazie mille!!

Before I started watching your videos I was intimidated by Italian cooking. Now thanks to your videos, my carbonara is on point. Your pasta alla carretierra and cacio e pepe are new additions to my repertoire; and OMG your rigatoni alla zozzona is an absolute showstopper! A real favourite with me and my girlfriend. Your channel has taught me a lot about traditional Italian cuisine and I love cooking the dishes. I also appreciate that the dishes are cooked with normal natural ingredients and not with some fancy products like special olive oils or spice mixtures, which the KZfaqr then also wants to sell. I don't understand how anyone can dislike this channel. The recipes taught me more than any channel and the interviews with different Italians and visits to Italy are a thrill. The only thing I ever criticized was his singing.

Vincenzo, I have been following you for a while now and I will give my serious opinion. I enjoy your humor and passion. I have also learned a lot about cooking from your videos. I have also watched your review videos and your interactions with others ... my take away- you are a good-hearted gentleman. My two favorite chefs are you and James much for the same reaso... your character, humor. and knowledge. Keep up the great work and as the saying goes soar with the eagles and don't let the turkeys get you down.

Sadly, very often I have to improvise with low quality ingredients (I can't afford the lovely ones); however, I've learned from you really good techniques and it really makes the difference. Dear Chef: you helped me to rise my own game on the art of preparing more decent dishes. Thank you kindly and greetings from a home cook with very modest abilities. P.S. Nah... Your personality is authentic and fun, your recipes are clear and easy to follow. Sure, they're probably not Michelin 3-star dishes. So you like food done the nonna way. Well, that makes *me* feel like "I can do that too"! Which is exactly the reason I started cooking your recipes ♥️ Some call it basic, I call it love for Italy, for family, for life and for community. And that's what you create through your channel, a community of people who love to cook Italian food. And who love to watch you cooking with your nonnas, your father, your son... You bring your precious family right to our homes. All while teaching us about cooking the traditional way. After trying your tiramisu recipes, I never bought it from the store ever again (and it used to be one of my favourite store-bought deserts). I don't care too much about the reaction videos, but on the other hand, that's how I found you so keep it up! Thank you for being a great inspiration for so many people. You have passion! And one thing I want to point out is that different cultures are raised to eat certain cuisines that might not match that of classic regional cuisines in other places. Look at Italian verses American pizzas. Very different. And some use a significantly great amount of pasta sauces. They might think the Italian versions look bland compared to what they grew up with. You’re dishes aren’t bland in my opinion. They might. Be different from American versions or other cultures, but it doesn’t mean you’re versions are incorrect or bland.

I learned alot from you in cooking and not just recepies..the ground base of everything and options. yes with my own twist. So my food taste ten times better then before.. little to good for saving to the next day.. food coma! Vincenzo I absolutely love watching your channel. You are hilarious and crack me up. I love how you call people out on inauthentic Italian recipes. You have the right, you ARE Italian after all. It's been quite an adventure for me being American and German to learn how true Italian cooking reflects an entirely different flavor palate ... rather than the over seasoned American way.

I learned a lot from this channel. Vincenzo went after our Filipino sweet spaghetti and I understood his criticisms. Regardless, I'll still eat it😂. Now I can make the traditional Italian spaghetti because I learned from this channel , it'll be a good alternative from our sweet version.

I love your videos and recipes! My two children never used to eat pasta mixed with sauce until I started cooking your recipes and now they love it, so that makes you a hero in my books 😊 I don’t find you arrogant or hypocritical at all, as you are very honest about any mistakes you make too and you react to your own recipes in the same way as you do to others!

This one seemed to have some more balanced comments than part 1. As some were just ‘this is just my taste’. Also depends on what you’re taking from the channel. For me: 1. I learnt about good and bad pasta brands (upgraded myself from Napolina to DeCecco) 2. Regularly cook Vincenzo’s Pasta Alla Salmone (amazing lemon flavour with a mild spice after kick), my favourite pasta dish of all time 3. Bought an Italian cookbook from Italy (in Italian) and have found some great regular dishes Keep up with the channel which kickstarted my Italian cooking adventure 🇮🇹

Vincenzo I really enjoy your channel. Not just for the recipes but mainly for the mindset on how to cook. I can improvise great meals just by keeping your tips in my head. Simple, good ingredients. And if its not authentic i dont call it that. Thanks to you ive learned to tell the difference between good and bad pasta, and now when my wife buys cheap pasta, i cant eat it, so thanks 😅 (but even she acknowledged its not good!)

Vincenzo, in tunisia we have a saying, hope it translates well: Talking with someone who doesn't understand you makes you age faster Point is, most of these people are extremely biased and they have zero constructive criticism. Therefore none of what they say should be deemed credible or valid. You are an amazing chef and you taught me so much. Thank you and keep going!

Vincenzo, don't listen to any of those fools. The fact that you want people to learn the traditional method IS EXACTLY what I like best about your videos. If I wanted to know some new way of making a thing that might taste great - I watch Ramsay, or Oliver, or somebody else. I watch your videos so I know - THIS is how Bolognese is made in Bolognese. THIS is how traditional Italian food is made. My dinners are 100% tastier since I've started watching your videos. Bravo, Vincenzo! We love you!

I started out critical but after I continued watching I found that you have been very complimentary to other chefs including Chef Jean-Pierre! I've found you to have a great sense of humor and don't blame you for wanting to keep Italian food authentic!

Your content is very fun and entertaining, and superb in explaining the general philosophy and methods for preparing traditonal Italian pasta dishes in non overcomplicated way. The videos have taken my own Italian food cooking to a whole new level. Hi bro! I am from India. Trust me the version of Italian food which is served here is so so different from what you show in videos. Never forget that you are helping a lots of people like me who want to taste authentic recipes. I don't give a damn if recipes are not 100% accurate cuz sadly in remote areas it is hard to find even 50% accuracy to authenticity of recipes.

Hi Vincenzo, I'm from Belgium, had an italian grandfather and dépend most of my holidays in Italy. Liguria, Toscana, Dolomiti, and mainly Valle d'Aosta... I know a fair bit about italian food ! You are an excellent cook, definitly! Love to watch you and make me wanna cook that Real italian food, simple in the ingredients, delicious, but tricky in the making. Those haters are just ignorent and/or unskilled. Ignore them, they are just jealous.

Vincenzo, Keep doing what your doing. You explain how dishes that originate in Italy are made and expose the difference between those recipes from those recipes on the internet that bastardize them. The fact that you sometimes attract negative comments can't be helped and should generally be ignored.

I'm so glad to be back as a subscribed member. There is so much cynicism out there. People are so critical in the wrong way. They misinterpret your reviews and somehow miss the jokes and lighthearted teasing. For example, we all know that, while you disagree with Gordon Ramsay's approach to many dishes, you still have the utmost respect for him. His reach is for audiences who want to ride a trendy wave in food preparation. Your reach, in my opinion, is for people who want to learn Italian traditions and understand them before doing unorthodox things that can sometimes dramatically alter a dish. I feel like your heart is in celebrating origins and traditions, but you're also cool if one throws in their own flare or interprations. Love your channel, Vincenzo! I made a manicotti recipe by myself a few years ago based on crepes that I made for the first time. It turned out pretty well. Actually, the recipe was from a person connected with "I ❤ Italian Food" channel. I've written too much! 😅 I'm glad to be back and engage with you on here when you have the time! :) - CRAIG

Im thankful for this channel because I no longer buy pasta sauce at the store; and I no longer use measurments. I make the sauce myself. I now understand why my nonna didnt know the exact measurements when I asked for a recipe. Cook with ❤, tastes better Reddit doesnt understand the true point of Vincenzos channel. They attack his personality, but yet they dont know him personally. It makes no sense to me?

The thing with the book and restaurant is such an idiotic perception of a cook. Sometimes people just seem to be bored and speak just not to fall asleep. I’ve been traveling quite a lot and in my experience, best chefs and cooks are to be found on back alley, with small kitchen and simple dishes, street food, private AirBnb host that will cook for you traditional dishes on the rural area… So that’s just a boxed thinking. You’re doing an amazing job Vincenzo! Molto grazie 🙏🏼
