Sophia., I grew up in rural Tennessee. in the 1950’s. We had two church services on Sunday - morning and 6:00 p.m. The preacher lived at least an hour away. So the ladies of the congregation took turns hosting the preacher for lunch and afternoon visit prior to the evening service. When it was my mother’s. turn, she outdid herself with all her best dishes. Ex. Fried chicken, homegrown vegetables, casseroles, pies and cakes. This all had to be prepared evening before and early before church. Of course, us kids had to be on best behavior at table. Thanks so much for bringing back precious memories. ❤️

What a great story. Our priest, actually he was an Abbott was fairly large. Our home was his favorite spot because he liked anything with sauce he could scoop up with a fresh baguette. My grandmother, being a chef, served the best sauces. He baptized me and the best memory I have of him was his smoking cigar and drinking port wine at the end of each meal. Never thought a priest could partake in either but he sure did. He s long gone now, I wish I had a picture. Oh and he woukd take off his shoes after a big meal, said it was an indication the food was good, his feet woukd swell.

@@mygreatchallenge So happy to hear your memories of your childhood priest in France! We may have grown up in different countries, but have much in common. I love quilting,, sewing, and of course southern cooking. I still live in Tennessee and your channel has been such a blessing to me. ❤️

I wanted to share a tip on shredding chicken that makes life so much easier. You can do this with any meat. Put the cooked meat in your stand mixture with the paddle attachment, turn it on let it mix until shredded. That's it, no more forks, it's like a miracle!

I’m originally from Texas and have lived here in Canada for 39yrs. I definitely remember the “Preacher’s Cake”. Brings back memories and so glad to have the recipe now because of you. 😋❤️ Southern hospitality at its best!

Hi Sophia, I love your vintage recipes. Keep them coming. The cake looks delish - shame I am a diabetic!! But, OMG, the look on Scott’s face when he took the first bite was sheer bliss. I can see me making this for a party as it is a great size. 😘💕🍰🇦🇺

My mother, who is naturally thin, said most of the women she works with are either talking about recipes or diets. It's a bore for her because she eats to live rather than living to eat.

It seems like it would be better for her not to bake so many cakes if Sophia and Scott are on a diet. Especially vintage recipes that induce diabetes and hardening of the arteries. I agree with your mother diet and recipes battling it out is funny as a concept.

Women where I worked cooked old school and they've made the Preacher's cake. It's delicious. They changed the icing so it wouldn't be as sweet. Take care.

Yum! Please make a hummingbird cake for comparison. I believe the latter cake has more ingredients and is luscious, too.

This strikes me as basically the same recipe as British carrot cake with cream cheese icing. Only without the carrots! I've also seen recipes for carrot cake containing pineapple for moisture.

You're right that the frosting seems like sweetness overload! I wonder if you could get by with just a light dusting of confectioners sugar over the barely warm cake so that the powdered sugar melts into a very light glaze on top? Then a few chopped pecans on top? MMMMMMM I hated coconut as a kid but as an adult, learned to like it in moderation; however I am seriously allergic to pineapple in any form, so maybe substitute apples or applesauce for the moisture? Sounds good to me.

I made the chicken stuffing casserole last week and my husband loved it! I found it a little too rich for my liking, but I will definitely make again. I’m not a great cook, so easy recipes like that area blessing 😁 this cake looks dangerous! Coconut is my hubs favorite and pineapple is mine 🥰

Great video too bad that hubby and I are both diabetic...if we weren't we would be in the kitchen right now....we both love the pineapple, pecans, coconut and of course the cream cheese frosting. I am waiting for another garden tour. God bless you.

You should try the preachers cookie. That was also around the time a desert the women will make for the preacher. I work in a nursing home and my residence always talk about the preacher cookies. You might like them.

I like cake, I don't like frosting, so when I serve myself a piece I put it on the plate upside down so the icing sticks to the plate and I can eat the cake and leave the frosting stuck to the plate.

You can make the frosting with just the cream cheese. Leave out the butter, it doesn’t need it.

I'm not afraid of the fat in the frosting. I was told years ago you can cut the sugar in any recipe by as much as half. Now, with it calling for 2 cups of confectioners sugar, 1 cup might be noticeable. The butter and/or cream cheese may have salt already, but try adding a pinch of salt to cut the sweetness. I'm not a sweet person, either. ☺️

My dish was a tad smaller, so it took nearly on hour to bake. It may take two hours to cool down! But it will be worth the wait!

Since the frosting has cream cheese, would you need to store it in the fridge so it doesn't go bad or do you think it's ok on the counter for a few days?

I just found out that some people leave their butter on the counter. Not to be melodramatic but I was in shock. Even if it's safe it sounds gross. Freeze butter then thaw each stick in the fridge as it's used. We never leave it on the counter. Cream cheese would get mold on it if left out.

Is Scott filming you while making the cake is that why there is the side view of you talking into a camera. It may look as if it was unhealthy but back in the day people wouldn't have cake and biscuits everyday like we do today so a slice of a rich cake now and then was not to bad. The cake looks great the ingredients for the frosting says 1/2 stick of butter but you used a whole stick is it better to use a whole stick?

Hey Sophia, since you like doing recipes maybe you could help me. I’m going to try a plant-based diet. But I’m having trouble finding recipes. One big problem for me with food is that I’m allergic to pepper. I mean table pepper, black pepper. I know a weird allergy completely turned my life around.

KC’s Creation, congratulations on making this important decision! I wish you so much luck on your journey. I started on a whole food, plant based lifestyle almost two years ago. I lost 70 pounds in the first 10 months or so, dropped my blood pressure to the point where I got off my blood pressure meds AND so far, since eating this way, my autoimmune disease has gone into remission so that I could eliminate an immunosuppressant drug that carries risks with it. I will never return to the Standard American Diet (SAD)!! There are MANY KZfaqrs I have followed to get proficient at cooking and living this way. A few of them: Chef AJ, Brand New Vegan (also a website with some great recipes), Well Your World, Nutmeg Notebook, the Jaroudi Family, Jane Esselstyn, Cooking with Plants, The Whole Food Plant Based Cooking Show...SO many more. There are some documentaries, too: Game Changers, Forks Over Knives, What the Health... You should explore the doctors who have all the research and data supporting this way of life, too. There is so much information out there and passionate advocates. Chef AJ has a daily live show on KZfaq where she interviews a lot of doctors, nutritionists, chefs and home cooks, as well as ordinary people who have had remarkable health outcomes. (Coincidentally, Chef AJ is also allergic to pepper!). I’m sorry I went on and on, but I am also passionate on this subject. Again, good luck and good health!
