I found a theory as to why her clothes turned blue along with her: Violet is clearly very anxious, and when someone feels anxiety, it is normal for them to start sweating; however, because she is transforming into a fruit, the water stored in her body is being fused into juice, causing her to become drenched in juicy sweat. This could also explain why her clothes don't rip off as she starts growing, since they are now stuck to her body.
