Vishuazu leek soup is a tender French soup based on leeks and potatoes. You should like this onion soup, even if you are not a fan of onions, its taste will be so mild that you will not even feel it. This cream soup is quite easy and quick to prepare, so enjoy the real exquisite French taste!

Ingredients for Vichy soup
600 g of potatoes
700 ml of water
1 leek (200 g)
1 onion
30 g of butter
100 g of 30% cream
½ tsp. fennel seeds
salt and pepper to taste
Step-by-step recipe for Vichy soup
Cut the potatoes into rings, place in a saucepan and pour 700 ml of water, add a pinch of salt. Cook until cooked through, about 25 minutes.
Cut the green part of the leek, we need only the white part, about 200 g. Cut the white part of the onion into rings. Peel an onion and cut it into large enough pieces.
Heat a frying pan with 30 g of butter and fry both onions until soft with the addition of fennel seeds. Transfer the onion to the potato pan and cook all together.
Do not drain the liquid from the prepared potatoes. Transfer the potatoes together with the onions to a blender bowl.
Add the cream for the creamy texture. Beat until smooth, add salt and pepper to taste.
