Next time throw your peppers and onions in with the sausage when you brown it. They will shrink when they cook down and gives you more room for the egg. I also poor my eggs after the meat and peppers then top with the cheese. ( less mess) I sometimes use mushroom and spinach in the place of the sausage and peppers

Exactly! I have made these for years and I always sauté the veg and meat, then mix eggs and cheese in bowl, cool veg and then add to egg mixture. I have used deli ham chopped in small pieces and it is very good!

Not to mention the veggies taste so much better when cooked! I don't have patience for the individual muffins. So I throw entire mixture with lots of spices and a splash of milk into pre-made crusts for 45 mins at 375 for quiche.

I really appreciate you sharing Gigi's progress in school. My oldest will be going to preschool this fall and it'll be the first time she's been away from me and I am NERVOUS. And I was even a preschool teacher before staying home with the kids, but the nerves apparently don't go away! I'm so glad she is doing well in it!

We love making egg muffins. A tip- dice your veggies into smaller pieces and rather than layer them, mix everything (the veggies and meat and cheeses) together in a bowl then place a scoop in the muffin tin followed by the egg mixture.

I put the egg mixture in before the cheese. It's the cheese on top that makes it more difficult to egg in the muffin tin.

I love them too! I'm on keto and they make such a great breakfast on the go/snack. I use bacon, cheddar and either spinach or broccoli in mine.

You’re smart to put Miss G in 2 days a week, the more often she goes the less jarring it will be. Re-starting daycare after almost a year around this time last year was HARD for my kiddo but they get used to it quickly. I would ask her or the teachers the names of the kids in her class so you can encourage her by asking if she wants to see/play with specific friends. It will get easier!

I heard in a Costco secrets video that Costco is generally least busy on weekdays from 3:30-5:30 PM! I tried it and it's been a hit so far!

As someone who did NOT handle preschool well,it does get better. My first day,which was also my birthday yippy me lol,I cried/was mad pretty much the whole day. Lol I laugh thinking back on it. Anyway,but yeah within a few times of going I was ok. I was/still am a person that doesn't handle change well. But once I get comfortable, get a routine and know what to expect,I'm better. So hopefully Gigi will be similar and once it becomes routine and she feels comfortable with her surroundings,drop offs can happen with confidence and excitement.

I remember the weeks before my youngest and I was soooo emotional about everything related to my oldest because I had so much guilt about rocking her world. This blog brought back all the fun emotions of bringing in our second baby 😍😍

After so long watching your videos Jess, I finally caved and got Thrive Market. At first I was annoyed with myself for being influenced lol, but I totally do love it. Something really interesting I learned in my psychology class about attachment styles is that a child with a healthy attachment to their parents can look like a child being upset that their parents are leaving them at childcare then the child transitions to having fun and being engaged in their class. I think sometimes parents feel bad that their child is upset and may linger trying to help their child but it’s actually okay that they are a bit emotional. They are just processing their big emotions. Just sharing cause I thought it was interesting

You can mix all of the ingredients into the beaten egg and pour into the cups so they are evenly distributed! :) Also, once I started making egg bites a lot, I bought a silicone muffin pan and that made cleanup so much easier!!

The first week broke my heart, and I cried SO much. It’s week two and now she’s doing amazing. They’re resilient little things. Gigi will adjust even more, too ❤️

I have 3 kids who are all in their 30's and have 4 grandkids. It still gives me pause how differently each brand runs in sizing. Some tips I learned early, especially with infants, to not go by the "size #" & we didn't take the tags off until we made sure the outfit fit. (Kids blew past some sizes, especially pants so they got rolled up to get at least 2 sizes out of them. Loved overalls.) And keep receipts so there's never a problem returning or exchanging especially like 3 months out. Congratulations ❤

For our little girl, I got her a smallish laundry basket. I use that as her hamper and then wash clothes and dry them and boom back in the basket. Then I fold and put away and then boom back in her closet as the hamper

Hey Jessica! A hint about the egg muffins- I put the vegetables in the pan first and then add them to the eggs, sometimes I even blend everything together in the blender and then pour it into the silicone muffin forms. As a last step I add the cheese on top 🤗😊 Please do more vlogs 🙏

We make the egg bites a lot. Sometimes we use spinach and bacon bits with different cheese. Pretty much anything you like in your omelets put in the bites. Enjoy

You just can't ruin egg muffins. I have a twelve muffin pan and I always make three different kinds. Sometimes it's smoked Gouda, cracked pepper mill turkey & mushrooms, sometimes it's /western (ham, cheddar, onions, green & red bell peppers)/hot Italian sausage, peppers & mozzarella/prosciutto, Swiss cheese & asparagus/etc., etc. The combos are endless. I don't mix all the eggs though. I crack an egg in each muffin well and then add toppings. Also, sometimes I start with a triangle of Pillsbury croissant dough and then add the egg and toppings and sometimes I make bacon shells and drop the egg muffin into the shell...Ideas are endless!!!

Just a tip for your mix and chop tool, I use mine to chop up strawberries for strawberry sauce for shortcake or cheesecake. It works great for that too!

My family loves those egg muffin things. It's a great way to use up leftovers. I've even used leftover fajitas. I can totally relate to getting past the checkout line without buying those little temptations. They seem to know just the right things to put there that will tempt me. 🙂
