helo friends!! this is a spontaneous 'what I eat in a day', and also some journalling prompts for September reflection / October goals!! hopefully in the future (if anyone enjoys this type of video and wants to see more like it) I will have some more well thought out recipes + actually do something more creative than... avocado toast... lol
reminder that the most important thing at the end of the day is that you're being kind to yourself ! eating nutritious foods will help you feel better, but if you're constantly being negative towards yourself + your body in your mind, no amount of vegetables will make you truly healthy. be good to yourselves ! 🫶🏻

recipes !!
✩ breakfast - 'banana bread baked oats' ✩
35g oats + 15g protein powder, or 50g oats
1/2 tsp baking powder
cinnamon + salt
1 egg
1 banana
smidge of vanilla extract
my toppings: 25g bluebs + a big spoon of almond butter!
- bake at 160 celsius for ~ 15 mins (air fryer, oven will take longer!)
✩ turmeric ginger shots - makes 6x100ml servings (1/day) ✩
2 big lemons (remove seeds and rind)
1 big orange (remove seeds and peel)
1 big thing of ginger (peeled)
2 sticks of celery (chopped)
1tsp turmeric, with sea salt and black pepper
300-500ml water, depending how thick you want it
splash of apple cider vinegar (literally dont add this its disgusting and bad for ur teeth)
- blend + drain twice, freeze the pulp for smoothies, store juice in fridge! (:
✩ lunch - avo sourdough toast + crispy eggs ✩
2 slices sourdough
1/2 avocado - season with lemon juice, salt, pepper, chilli flakes
5 tomatoes (plum are best)
1tsp coconut oil
2 eggs
sprinkle of seed mix
some spicy mayo (or chilli jam, or nothing! do what u want lol)
✩ dinner - baked lentils + tamarind-glazed sweet potato ✩
1 onion (chopped)
thumb-sized piece of ginger (chopped)
3 cloves garlic (chopped)
500g sweet potato (5mm slices, I leave the skin on - wash thoroughly!!)
10 cardamon pods (remove seeds and crush them)
1tsp cumin seeds
1tsp turmeric
chilli flakes
2tbsp groundnut oil
250g red lentils
400g tin chopped tomatoes
400g tin coconut milk
500ml vegetable stock
3tbsp tamarind paste
2 limes
- fry the onions in the oil until brown, add the ginger, garlic, and cumin seeds + fry for a few more mins. add the rest of the spices, lentils, tomatoes, coconut milk, and stock and bring to a simmer. cover with sliced sweet potatoes + tamarind. bake in oven at 180 celsius (fan) for ~30 mins (make sure the potatoes are fully cooked!) serve with fresh lime juice.
