This is similar to our Adobo in the Philippines. Sometimes, we add in hard boiled eggs and potatoes. I like it very spicy, too.

I believe it's sugar, if you mean the white substance he put into the wok before he put in soy sauce. He's somehow caramelizing it. I think what he's cooking is a variation of braised pork. :)
