Ok, I just made these sausages: this is one of the best vegan meat recipe I've ever eaten. I added two more ingredients: 1. Some fennel seeds (blended) 2. A teaspoon of tomato paste I just fried them in some oil (1 tablespoon) no batter. They were delicious! I used them as one of the toppings on my pizza 😋

I can see how the tomato would make a huge difference. When I was a meat eater I would put tomato ketchup in beef burgers. It made all the difference.

I think if you are going to try this again you should add seasonings that are in regular sausage like garlic powder onion powder paprika fennel crushed red pepper black or white pepper and sage. Also you could add ground up mushrooms or a little mushroom powder. this sounds like it would be fun to play with and experiment on.

My main vegan sausage/burger recipe is oatmeal based and I add all those herbs/spices and more plus lentils, brown rice, and nuts or seeds. I make my sausages round and bake them.

O mon Dieu ! Such a good Idea ! I found on my passed away and lovely grand-ma old books a War cooking book and there is a lot of méat subtitutes recipes. Evrything wasn't super tasty but, a " Fake lamb " recipe was sooooo good ( I also "veganise" it because it was végétarienne) and now it's my little secret 🥰😎😉 . Also that proove something. I Heard so many people who told me " yea you know , In peace Time eating good product as vegetable it's ok but juste imagin if it's thé War ? It's a luxury and people would eat there own docs and cats" and when I red m'y grand-ma s' Book , I understand that argument was actually F****** WRONG ! 🤣

Food value likely also meant they were sending all their “good” meat and dairy to the soldiers. So the regular folk had to eat the leftovers and figure out how to make it stretch.

This video had me fascinated from beginning to end! I have never seen any such book as I’m fortunate enough to not have had any relatives live through a war, and... I don’t know, this has been like seeing through a window into a whole different world 🙂

Seventh day Adventist make oat burgers and we put garlic, onion and soy sauce. You can add other seasonings also like sage. We bake them in the oven and save them when you have unexpected guests or you need to make a meal quickly. You can also add some mashed beans too. Thank you for sharing this bit of history with us.

This is impeccably timed, my dear! I have a couple of vintage cookbooks that have sections dating to WWII rationing. I love this stuff! Even though, as in this case, some of the recipes are head scratchers: Why batter the oat sausages, for instance? Extra calories? Who knows! Can't wait to see what you attempt next, though "potato cheese" sounds intriguing. TFP : )

Calories were in short supply so something to add calories as well as flavour and texture is good

In both Britain and Ireland we have the black and white puddings, of which the white is made using oatmeal for body. Then of course you have Scotland's haggis. I'm sure the author would have had these in mind. I make a white pudding by freezing tofu to get that meatier texture and then adding it to oatmeal with the spices and herbs normally used in Irish white pudding. You can also buy vegetable suet, and when I have it I throw that into the mix. Wrap up the sausages in cling-film, steam and then cool. Then slice and fry as traditional. The tofu adds protein and at the right ratio with the oatmeal cuts stodginess.

@@EastMeetsKitchen I don't know if you've come across Sosmix. It is one of the original vegan sausage mixes that's been around long before all these chiller cabinet veggie sausages today. They had vegetable suet in the mix. You can still find it made by Granose.

that looked fun! lol love your facial expressions =D connie's rawsome kitchen had a similar recipe and i had made my own version of it. i make quite a few patties to freeze. i used dry rolled oats (the thick ones), ground flax, herbs spices, tamari... i pulsed in the food processor: onion, garlic, celery, carrot, mushrooms (don't tell my husband, he ''hates'' mushrooms), some kale spines, peppers etc/whatever i have on hand. mix everything up in a very large mixing bowl, add some boiling water, mixing with a spoon until it's mold-able but on the dry side and make patties with them. i brush oil on a big electric griddle and fried them until browned on each side and put them on racks to cool. i put a square of parchment between them and froze them in recycled plastic bread bags. --to cook, line the bottom of skillet with sliced onion, place the frozen patties on top, pour over boiling water, some tamari and seasonings, cover and cook for half hour. flip them after 15minutes and add water if the gravy is getting too thick or evaporated/burning... my husband loves these with mashed potatoes and veggies. the patties turn out kind of like salisbury steak.

Have you ever noticed how many recipes labeled "curry chicken" or "orange carrots" contain the least amount of curry or orange zest? The amount is usually 1/4 teaspoon, like that would make soooo much difference... like anyone could actually taste it. Anyway, it's great news, I suppose, that wars come equipped with their own survival recipe books.

This looks like a great recipe. Maybe you could try adding some Atora vegetable suet in place of the meat suet. Perhaps it was there for more of the sausage fattiness and mouth feel of a real sausage than actual flavour? So keep in the yeast extract for the flavour. I think I’ll give this a go. In war years, foods, clothes, shoes, and other goods were rationed, strictly. You bought your goods with cash and ration stamps/ticket. If you wanted coats, you could only buy one a year, according to my mother.

I'd love to see more of these recipes. Are there digital versions of these books? I may give this a try. I'm not vegan, but am leaning heavily plant based. I'm open to try new things I'll probably go with grated carrots, diced celery, diced onions, mushrooms, maybe some walnuts, or pecans.

I have never thought of yeast extract. Must try that. I tried something similar before and wrapped them in rice paper and baked them. That gave them a crunch without the oil 😊 I may try this too with added mushrooms I think and perhaps miso paste . Thanks

So fun! Maybe start with mirepoix instead of just onion? Another way to go might be to be less shy with the soy sauce and/or add some vegan fish sauce? I think mushrooms would be great in this, especially if you marinated them in liquid smoke first.

I was thinking that substituting just yeast extract for suet without additional fat might make it dry. It would be fun to experiment with this to make different kinds of sausages, like adding fennel seeds or maple syrup. I've never used yeast extract, so I'm looking forward to trying it. Also, I love the nostalgia of this recipe!

My favorite sausage has apple and maple. I'm going to find the best no meat recipe then add finely chopped apples, maple syrup, sage, a bit if poultry seasoning and chick-un or a low sodium chicken flavoring. I already bought freeze dried apples for my pantry so I can make yummy faux sausages if we have a meat shortage. So much doom and gloom news about impending food shortages. I can be vegetarian and let the people that only want to eat meat have the meat that's available. I'm old, had my share of meat over the decades. The older I get the less meat I eat anyway.

I make oatmeal sausage patties all the time using the fry-simmer-fry method, but I've never tried this method! I will try it soon and if you like this recipe, look up the oatmeal sausage video that connie's rawsome kitchen did, I make it all the time and use it for so many recipes! It's great on pizza and crumbled into a "sausage roll"

I think this could be a good base recipe to jump off to other improvisations. Make sausage one time, then some sort of patty the next, a replacement for tofu or seitan for variety. Add different veggies and some different grains for texture variations. The fact that you can shape and mould it is another plus. Mix and match. :)

I think you should have added some fat to the recipe to replace the suet. I don't believe the suet was in there for meaty flavor but it was in to add some fat to the sausage patties because sausage are usually somewhat fatty. You could have added a tablespoon of any type of vegetable oil or animal fat. I personally usually add coconut oil or a light olive oil.

By course oatmeal do you mean rolled or steel cut? For the yeast extract would you recommend marmite or vegemite? Thank you for adjusting this recipe for vegan cooking ... I have never not loved something you've made.

@@EastMeetsKitchen OK, so for brunch this morning I made a "Lockdown Fritter" ;) (no exact quantities, I eyeballed it as usual) mixed together roughly equal quantities of oat flakes and gram flour with a little water, while I let the batter rest I fried a single mushroom & a slice of onion, both finely diced, added them to the batter along with small quantities of yeast extract, celery salt, veg bouillon, nutritional yeast, turmeric and black pepper. Fried for a couple of minutes each side. Result: not bad at all, though a bit too heavy on the salt (ketchup helped) ;) I can improve upon that!

I've made breakfast sausages before and added liquid smoke and soya sauce and they are really good and make a change from sweet porridge oats in the morning. I also made a Woolten Pie last weekend. Basically stewing veg, carrots, swede, onion (didn't have all the veggies listed in the recipe) with some oatmeal, yeast extract, veg stock and mixed herbs, topped with sliced potato, baked for approx 40 mins. It was fantastic, very 'meaty' and filling.
