In this video, I waterbath canned milk that I bought at the store. In this case I started out with 2% milk. It's always good to have milk on the shelf in case the SHTF or a hurricane hits or the stores run out. Be prepared whatever may come.

I have found that canning cold milk, room temperature jars after being boiled and room temperature water bath to start and process for one hour after boiling tastes more like whole milk...When you do warm milk, hot jars and hot water to start it will taste more like evaporated milk. I have been canning milk and cream for over 55 years. When it's on sale I buy as many gallons as I can then can it.

Ok, so I'm going to try this. I have pressure canned milk 3 times now, following what everyone else does, and it failed each time. Best I got out of that was 3 months of shelf time. The milk turned an almond color the first time (lasted 4 months); turned a darker color, separated, and smelled not so great for the 2nd & 3rd tries. Honestly, I think a pressure canner cooks the milk far too long. I thought about shutting it off after 10 minutes of steam, but haven't tried that option yet. Water bathing just seems to make more sense - milk is far more sensitive than sour cream and whipped cream. I did sour cream and whipped cream in a pressure canner (same process as milk) and it turned out great - so far have 10 months on those and they are perfect. Loved watching your video - you have such a fun, real down to earth disposition! Thanks again.

I don't drink milk so I can't testify to how it tastes but I do use it in cooking. When you open them, it shouldn't stink. If it gets thick and the liquid seperates, that's ok. You can remix it with a blender or just make cheese out of it. That happens sometimes when people let it get too hot. Farmer's cheese is easy.

This is a great video, thanks. We just got a pregnant milk cow so she will be dry for several months and I don’t plan on buying a pressure canner ($$$😳). I’d like to preserve some milk for those months. Everyone is telling me how dangerous it is to can milk (low acid). Why is there so much fear when people have been doing this for so long? Also, does everyone boil their milk again once can is opened to kill any possible bacteria? Thanks everyone!!!
@TexasHomesteaders
@TexasHomesteaders 4 ай бұрын
I don't know why we now live in a society that is so fearful of anything and everything. Outside of America, most people waterbath can everything the way my grands did. I don't drink milk because I am severely lactose intollerant so I only use it in recipes, so yes, any bacteria would for sure be cooked. This process works great with super fresh milk. It can sometimes get clumpy with store bought milk but I either make a farmer's cheese or blend it back together if that happens. There are other channels that do it the same way I do as well as a couple of fb groups. Makeitmake is a good channel if you want to wb (waterbath) more so than just pc (pressure can) and I believe she uses it in her coffee. Look on fb for rebel canners or waterbath only groups. If you need a link to those, let me know.
