We received an Appalachian style salt cured moldy ham, its now about 22 months old, today was the day we tried it! But first we move our chickens from the back of the place to the front and set up the premier 1 electric fencings. Thanks for watching and God Bless!

Gary you can soak the ham in cold water before you cook it and it will take some of the salt out. Love my country ham!

You don't see city kids outside helping do chores nearly as often as kids in the country! Ransom and Ranger and even Mazzy do great enjoying what God gave 'em!

I watch all your videos, and Ransom is the real farmer of the kids. He seems to want to be part of every farm thing, and I love his enthusiasm. 😊

My dad had dementia, and would often wander off and get lost in his thoughts as well as location, he had to be hospitalized a couple times for dehydration. Calling for a welfare check was the right call!

I have worked on dementia units the poor people loose sense of direction Often forget to drink plenty of fluids. We would have sheets of paper with all the names an check them all off when they received fluids to keep them hydrated every hour.

My grand pa....also had dementia. They had to put a slide chain on all outside doors. Then g ma took a few links with a tiny lock ( not combination it too large . No way to get out 🥰

My family is from Virginia- I watched my great grandmother , grandmother, and mom scrub Virginia country ham. It had been covered with salt , and buried in the ground for over a year. They used scrub brushes to remove the mold, then slow baked it for. Hours. The ham was so tasty, the house smelled so good :) wonderful childhood memories . Makes lots of good eating 😊

Thank y’all for calling for the Wellness check. The first thing that went through my mind (what if he walked away from his home like a lot of dementia patients do) and his family is worried and looking for him. I pray that he’s ok and gets the help he needs. 🙏🏻

That ham looks delicious! 💖💖💖 I am glad the man was mostly harmless and also that y'all are taking care that he doesn't get heat stroke while he is out talking to rocks. It does sound a bit like dementia, and those folks need special care and love. 💖💖💖

We always washed the mold off before we cut our two year old hams. I like it lightly browned in a cast iron skillet and then make red eye gravy with the drippings.

Thank you for getting the on foot traveler help. Many people would just turn their head and ignore. Prayers he can find his path for mental wellness. Ii grew up eating that. I had 3 Aunts with farms. If I recall the hams hung in the barns in burlap bags. They preserved all of their meats (chicken, beef, pork) in one form or another and could throw down a full table family style meal in no time. Two of them made a bridesmaid dress for me and I took them all the materials, notions and pattern. They looked at the picture on the front of the pattern, laaid the fabric out and started cutting. In a panic I said wait we need the pattern! They laughed at me and said we don't need a pattern and had that dress finished in no time and it fit me to a tee. Aaahhh, the good ole days

Country ham is yummy. It's no different than eating cured prosciutto. However, we do lightly brown because we like to make red eye gravy. We make our gravy by pouring a cup of coffee in the skillet with the salt from the fried ham.

Ransome is such a good boy I love that he enjoys being outdoors helping, all country children spend a lot more time outside than inside, I know mine did and my grandchildren that are still in the country still go out more than the town children do. Such a good helper ❤

This is the way my Mother cooked ham. That’s the only way she got ham too. She didn’t put flour in her red eye gravy. You can soak the ham in water to lessen the salt.

Good for you guys notifying the sheriff. My neighbor developed Alzheimers real bad and he would just take off walking, sometimes barefoot, sometimes with a guitar. The thing is he had no idea where he was or how to get home. None of his kids lived close by and his wife was blind. So it took everyone to keep a lookout for him and get him home.

Where I grew up here in south western Virginia, we called that “ country ham”. I remember many-a-times having it with “red eye”gravy🤗

Again you are bringing back childhood memories. Back on the farm in the early to mid 50's we had a large (well seemed so to a little kid) smoke house that had that distinct smell, with one or 2 hams hanging - I loved that snell - the negative of the smokehouse was that was where Dad took us to apply his belt to our bottom sides for the slightest infraction. Thanks as always for the memories.

YES!!! Red eye gravy !!! Reminds me of my childhood! Delicious! I'm from NC but now live in Texas, and my family are not big ham fans, so.... Cassie, I'm sorry, but there is nothing better than sopping up red eye gravy with biscuits! We also used to crumble up fresh homemade cornbread in a pile and pour fresh homemade pinto beans ( made with the ham bone after the ham was eaten) over the cornbread and along with cut up garden raised tomatoes eat as the meal. Oh yes!!! Enjoy!!👍👋❤️😊🍅🫘🌽🍖

My grandfather would cure his ham like that and every Christmas he would pull it out of the ground and grandmother would scrub the mold off. Grandma would go to the basement and get vegetables that had been canned over the summer and would cook Christmas dinner for the family. Grandpa would get the slicer out and slice the ham put it a pan and it would sit in the refrigerator ready for left overs. Grandma would slow cook the ham over night. Thank You for bringing the lovely childhood memories back for me. I sure miss them both. Much Love from our family to your family 💞

FYI. The oldest cured ham is in my hometown of Smithfield, VA. In the Isle of Wight county museum. It was cured in 1902 and can be seen in the museum along with the oldest peanut. Smithfield hams are still going strong. My son manages one of their hog barns, approx. 4000 hogs at a time.

Nothing better than country cure ham and red eye gravy. Brings back memories of my grandpa’s smoke house with hams and bacon slabs hanging from the beams. He used hickory wood to smoke the hams and bacon. Grandma’s breakfasts were always good with her homemade biscuits, butter from her daisy butter churn, ham, red eye gravy, eggs from grandma’s chickens, grandma’s homemade jelly or jam and glass of milk from their dairy cow. ( Sorry, got to rambling on. Something us old people do. 😂) Prayers for the guy that he gets the help he needs. Also prayers for anyone else who is in need. 🖐️ high five Ransom. Love how he likes helping out.

Love country ham. We had grits, eggs and redeye gravy. We just put water in the drippings and put it on our grits not the biscuits. I'm with Cassie, don't like soggy biscuits. Glad the man moved on without any problems.

Most people don’t know what Red Eye gravy is My Grandfather made his with coffee in the drippings instead of water. I was little and didn’t like coffee but I loved that gravy over biscuits ‼️💕🥰🐓🌸 👵🏻

Usually you soak a salt cured ham before cooking! It will take some of the salt out! That is a beautiful ham! My mom made red eye gravy, so good! TFS

Ransom is such a good helper. He enjoys the outdoors. I like that fencing you guys use. Would be interesting to know how the Indians or pilgrims did there ham. Buffalo that the Indians killed to eat and keep on hand. Interesting to think how it was done back then. Thanks for sharing

Try the gravy on grits if you have grits there. Yes you can wash some of the salt off. Here in North Carolina we call it country ham.

A cured ham is very good. You need to have it cut or sliced at the butcher's. If it's really salty you can soak the slices in water and then cook it. I put it in a frying pan and just cook it on each side a little. Good morning stuff

Need to try the ham without heating it up. The ham is cured, so it isn't raw. The salt "cooked" it. Its heavenly. Try it. Its incredible. Bird flock keeps growing. 😃 love it.

That ham looks awesome!! My grandmother use to make the best salt/sugar cured hams. We would wash/rinse the salt off of it. That red eye gravity is awesome with grits!!

I love you are including preservation from other areas. Kentucky prevents theirs like Ed. Slice thin put in cast-iron skillet add coffee for liquid simmer for about 10+minutes. It will tenderize as it cooks.

I love this video. I love moving the chickens, I love seeing Ransom love doing farming work, he’s amazing. He a young man farmer. I simply love Cassie. I loved seeing in Gary’s eyes that he is a true pioneer with how the ham was cured. He seemed to trust the process. I look forward to seeing the kids and seeing the chickens in there new home & the barn raising. ❤️

Wow this fencing is so much better than when I was a young'un!!!! So much nicer too be able to rotate and change the grazing... All of our fencing were permeant... Would have taken us at least a week to put up 160' x 2... I have thought this during whole time I have been watching the homesteading channels. I always loved smoked ham... I really can't do as much salt as most folks do.... But occasionally I sure would... BTW, I have had redeye gravy yes,,,, hands up very good... You have to make some Yams to have with you Ham... Very yummies together....

The old timers really Did know how to Preserve and keep their food, making it last as long as possible...something we are going to need in OUR future soon.... AND No Preservative Chemicals added!

I am from Northeast Tennessee. My grandfather used to raise hogs and made “country ham”. I always loved it. It is good on a biscuit.

I can almost smell that ham all the way here in CT! My late husband was from Louisville, KY, and taught me all about red eye gravy -- he loved it! I had never heard of it, but learned to make it for him.

That ham looks delicious. My great aunt & uncle raised hogs in SE Mo & sold most but butchered some for their use & used to salt cure & smoke hams. They were so good. My Southern granny used to make red eye gravy & soak her corncakes or toast in it without flour. Sometimes she would just soak them in bacon grease. Never sick in her life, born in 1889 & lived to be 96 was sharp as a tack & active till she went to be with the Lord. . Ate lots of greasy pork, white beans, potatoes, green beans, real butter & used lard for frying food. She made the best pan fried potatoes I've ever eaten. I believe you could fry a shoe in lard & it would be delicious. My other grandmother was from Ukraine & also used a lot of lard! Enjoy that ham & make bean soup with the bone. Yum yum.

We called salt cured ham - country ham and sugar cured ham - City ham. I can remember my grandfather processing pigs and making country ham. This was in the late 1940’s and 50’s.

It's a Country Ham. Salty, but you can eat it straight, bake it a bit, soak it to remove some of the salt. It is a delicacy.

That is ALWAYS how we did our hams here in Cocke County Tennessee in the Great Smokey Mountains of Tennessee... we butchered 2-4 hogs every year and had a smoke house that we always put our hams in. Red eye gravy, my dd eat almost daily, u can make it with coffee or just water, but I like it so much better with coffee.also. He never put flour in it, tho he said it is supposed to be thin like that. U an eat it and not cook it, and if to salty u can rinse some of the salt off before u fry it

Dad would salt a ham each year. We only ate it for breakfast. Gravy, home made biscuits, slices of fried country ham, eggs, and red-eye gravy. After you fry the ham remove it. There will be some oil and bits left over from the ham. Pour a cup of strong coffee and stir. It will be very thin. Pour a small amount over the gravy after it is on the plate. So good. Slice what is left and freeze the amount you use at a meal.

We loved coffee gravy but we put a little bacon grease in the skillet to brown the ham in and then add your coffee scape the bottom of the skillet as you warm up the coffee. But you forgot the fresh eggs you shoulda fried up to eat also.
