Great episode! The behind the scenes documentary you mentioned is called "From Star Wars to Jedi, the Making of a Saga". I have it on VHS and watched it a ton as a kid.

The film you were trying to think of is Warriors of Virtue. I loved it as a kid.... holy shit it did NOT hold up. And yes. They had action figures.
