Today we took a deep dive into Huaiyang cuisine 淮扬, which is one of China's four main cooking styles! We tried:
- Squirrel fish 松鼠鱼
- Longjing prawns 龙井虾仁
- Crispy chicken with Longjing Tea 西湖龙井茶香鸡
- Soup dumplings (Xiaolongbao) 小笼包
- Pan fried pork buns (Shengjianbao) 生煎包

Another reason called Squirrel Fish is the sound of pouring the sauce over the deep-fried fish. You will hear the sizzling sound when the sauce poured on the fish which just out of the oil pot. They get the likeness in form, but still missing the likeness in spirit. It's a bit challenging today.

In ancient time, the downstream of chang jiang is called yang zi jiang. I think that is why its English name is Yangtze River

What a show stopping fish! Not a “try making this at home” kind of dish - I certainly don’t have the knife skills! Definitely recommend crunching on the crispy fish tail - so delicious 😋

Huaiyang cuisine in Chinese cooking is basically like French cuisine in western cooking, all fancy and elegant, but sometimes doesn't have much to eat.

Today you are basically eating Hangzhou dishes. All three dishes are from Hangzhou except the dumplings. Next time try some Shanghai dishes.

松鼠鱼,本名松酥鱼。制作时需要将鱼肉切条炸蓬松,鱼头上翘定型为跃龙门形态。后由于名字与松鼠类似,鱼体形态也类似松鼠尾巴,故以讹传讹后将菜品改良后鱼头不再上翘,而是整形为松鼠身体形态,改名为松鼠鱼。

Squirrel Fish, the real name is crisp fish. When making, the fish should be cut into strips, fried fluffy, and the fish head should be upturned to form a leaping dragon gate. Since the Chinese name of the fish is similar to that of a squirrel and the shape of the fish is similar to that of a squirrel's tail, the fish head will no longer be tilted upward after the food is improved, but it will be reshaped into the body shape of a squirrel and renamed as Squirrel Fish.

@@benthekeeshond545 if your pronounce chinese 松鼠鱼(squirrel fish)and 松酥鱼(crisp fish). they both pronounced "song shu/su yu".very simular pronunciation. and when I was young, we have the same dish in restaurant named "crisp fish"just as "squirrel fish"today. no restaurant served "squirrel fish"in that time. but today, no restaurant serves "crisp fish", all of them serves "squirrel fish" ,the same dish with different name. that's why I know what happened to this fish dish.

Yangzi is the old name or nick name for Chang Jiang (Long River). The river runs through so many areas of China that each area has their own names for it. The section in Jiangsu province was called Yangzi Jiang, or Yangtze River.

Btw I think the reason the Sichuan video didn’t get as many views is mainly because Sichuan food is already very common in the west. It’s good you are branching out to the lesser known cuisines. Squirrel Fish is a mistaken translation of its original name. In Suzhow the chef will put pine nuts all over the fish when done cooking. And pine nuts in Chinese is 松子,so the Chinese name of this dish is 松子魚。Squirrel in Chinese is 松鼠,totally different things. This "松” is completely different from other "松”. One is an animal and the other one is simply pine nuts. Interesting?

I'm loving your food vids....the food experiences, your commentary, your parents, the film quality and background music are top notch! I miss your China videos but Sydney seems to have such a great variety of chinese food destinations. Aims, can you speak more mandarin in your future vids? It's a huge component of your previous videos and find that it differentiated you from other foodie vids and made yours more extra!

You really make me hungry, Blondie. Nice Job! Just a kind correction. Generally, we say there are 8 major cuisines in China, besides the four you have mentioned in the video (Shangdong, Guangdong, SIchuan, and Jiangsu) , there are also Zhejiang (Zhe cuisine) , Fujian (Min cuisine) , Anhui (Hui cuisine) and Hunan (Xiang cuisine, which you have tasted already). Besides these, there are also other cuisines that are quite popular in China, like Dongbei cuisine, which is famous for its thick taste and huge portion, Xinjiang cuisine, which is a little similar to Arabic food and tastes amazing, and noodles from north-western provinces. The most commonly seen noodle shop in China is Lanzhou Ramen, which is from Gansu province. However, Shanxi and Sha'anxi each argue that they offer the best noodles. Of course, we can't miss lamb BBQ from inner Mongolia and Halal food from Ningxia and Xinjiang. That's even not finished, within each major cuisine, there are different sub-branches, even a county can have its own cuisine that is totally different from the city it belongs to. Well, it will really take you a lifetime to taste all of them. I am hungry again now .....

I am amazed how you know Chinese cuisine so well. A lot of ABC don't even have any idea about squirrel fish, Long Jing Prawn nor Huaiyang cuisine. From my understanding it's called squirrel fish mainly due to the presentation of the fish - it looks like a squirrel.

Chinese American here and love your videos. After I heard the end of the video 70% that watch aren't subscribers. I had to check if I subscribed to your channel. I thought I subscribed a while back but didn't.. so just did subscribe. Glad you mentioned it at the end of the video. Food looks so good and i know the taste because my dad is a traditional chinese chef and owns his own restaurant. Mainly retired. I don't live near home now but not far. watching your video always makes me miss his food. This is called 松子鱼 (pine cone fish) in my hometown. Cuz it looks like a pine cone. I never heard people call it 松鼠鱼 (squirrel fish). Maybe people from some other parts of China call it this way.

I never heard people call it pione cone LOL. in the region of South of China I think people call it squirrel fish. Well when the dishes are done . it looks like squirrels tail. Really petty. I guess that is why people call it “squirrel fish

I love to watch you guys . The trick with eating XLB (Xiao long Bao ) is that to nibble the top of the dumpling and let the hot steam release perhaps blow to cool it , the whole bun goes into the mouth that way you can feel the richness unctuousness of the soup balances with the filling. I used to pour the soup out too but took me years to find out that we should put them all in the mouth . Keep filming love your segments !

淮(huai) is short for 淮安(huai'an), my hometown~~~used to be a big city hundreds years ago and rich ppl brought chefs with them and competed cooking, that's part how 淮扬菜 developed😄

The host guy is from Anhui province, the cuisine there is famous for everything steamed, very healthy. While I was born in Suzhou, lived in Shanghai for 10 years, and currently living in Sydney, miss the food back in Suzhou and Shanghai, hope the boarder will open soon.

If you don't know how adventurous your Western friends are, this cuisine is probably your safest bet. Sweet & sour, not spicy, and with a crispy texture is usually pretty familiar and non challenging. I like to hook them in with this or hotpot, to lure them into a false sense of security and then pounce on them with Szechuan food. Bwahahaha

Amy. There is a higher calling for you above and beyond making videos with a Chinese theme. You are the perfect person to promote understanding between the Chinese and the Australians. Relationships are at its lowest points. Scott Morrison should consult a person like you. Someone so Aussie yet have insight into the minds of the Chinese. The world is big enough for both countries. The right way to approach the issue is to recognise that both can co-exist and both can win. One's existent enhances the other rather than eliminating or diminishing it.
