I don’t comment often but have to express my disappointment that KZfaq demonetized such a well edited video as yours. More people need to learn these skills and you showed nothing that should have caused them to do such a thing. I love watching all your videos although I’m a seventy plus female widow no longer able to do these things I love watching younger people who have realized these values. Keep doing what you do!❤

If your in-laws are willing to participate, it would be very interesting to have an interview or q and a session with them to discuss their experience/exposure to your lifestyle since moving to NC...what their own background is in gardening, raising meat animals, harvesting/canning, etc. and how they have adapted? what's different than they expected? does the food taste better? can they tell a difference in their overall health since moving/eating locally sourced food, etc.?

You should get a large butcher wall chart to give you good reference as to what cuts you get as you go along. Can be put up for an "at a glance" to maske sure you are getting all the right cuts.

Dang Jason you guys are close to 200k subs. Congratulations on processing your own beef. I work at a meat processing facility and I know it’s a lot of work to do it yourself. And you guys don’t have the big equipment so it’s even harder. The fat looks normal. Good color and not to much. When you feed to much grain to your beef it’ll cause the cow to grow a lot of fat

A band saw is a huge time saver that's what meat markets use and if your planning on a lot of butchering a lot it might be something to aquire

I. used to work in a Meat Processing Plant. We deboned up to 250 Head of Cattle every day.WE were 8 Guys and one Saw Man.You did ok. Next time will get be better as you will have learned from the first one.Just stay close as you can to the Bone when you debone this way you will safe time and work cutting the Meat of the Bones afterwards..

The slaughter looked smooth two weeks ago and you did a good job of butchering (piecing it out) the carcass too. Pat yourselves on the back for a job well done. I only bring 1/4 at a time into the cutting room so that the meat maintains a good cool temp. But, I have to do the cut alone. I use a Ryobi reciprocating saw with a stainless steel blade. At 70 a hand saw is a little much for me.

Jason for future consideration you might want to invest in a band saw. It will make cutting the ribs and the shoulder easier. good luck

Tallow which is rendered beef fat is kinda beefy flavored. Lard which is rendered pig fat is kinda porky. Both very good and very useful. Not only in the kitchen, but tallow can be used to grease certain things outdoors. It can be used to season your cast iron, to condition your cutting boards and knife handles. Just keep in mind "a little dab will do ya". Because tallow and lard can turn rancid under certain conditions. Ya'll have come such a long ways in your journey. You should be very proud of yourselves!!

Build a walk in cooler in that big workshop/ old horse house. The same way as you did the mobile cooler. With all the animal / bird schools you do it will quickly become a necessity.

next year purchase..... band saw :) great job yall!! i process about 4 deer a year which is ALOT of work. i can't imagine doing this much meat but it's free labor and such great knowledge. would love to come help on your next one

On pigs you melt the fat down for lard; on beef you melt it down for tallow... same general purpose.

Abundance Plus is WORTH EVERY CENT I pay and much more!! There is content there for everyone in the family and invaluable life saving info for the coming SHTF event we all know is barreling toward us at breakneck speed! If you are not a member there you are intentionally choosing to remain uneducated regarding vital life preserving skills that may soon be needed to survive and provide for those you love. Jason and Elaine along with many other awesome homesteading families show us how it's done ethically and respectfully and also allow us to observe their ups and downs as they face and work through them daily. Jason and family of workers. As a eat cutter for 28 years you did very good. Breaking down the fore quarters and hind quarters are a lot of work. Your time on one quater of one hour is wonderful. As you learn the cuts more you will find that a Rib roast might be for your family. Just like the huge rib steaks would be allowed to be a 2 or 3 rib depending what your family would eat in a meal with some left overs. I saw you with the top round in your hand. That can be sliced in about 1 1/2 " and they are then marianited for London Broils. then they are sliced on the bias for plating. YOu did look at this experience as fun leaning. God Bless You. We killed a steer the other week and I gave half to my friend. We shoot it, two girls well one and I’m an old lady. She did the skinning then we butchered it in the paddock cos we couldn’t move it, and we put the offal on the Ute in dustbins, then we turned it over on to some plastic and skinned and butchered the other side, we were exhausted. My hubby was in hospital. We rested for four days and hung it in the fridge in pieces. Then we had to cut it up, she had her partner help, I did it alone. Lol. Hubby helped when he got home, all done two freezers full now. Hard work but so grateful for the meat. 👍🏼👍🏼😍😍

Do put a "trailer dolly" on your wish list. We bought ours in 2018 or 2019 and it wasn't all that expensive. I think it was a Harbor Freight item. It consists of a bigger wheel and some welded pieces of tube pipe .....it may be something that a clever person could weld up after looking at one. It is somewhat similar in concept to that rear,,chicken tractor wheel you use.

Hey Family, Raised on a Dairy Farm in Pittsford, VT....We did this with our veal calves and our chickens...veal is basic milk-fed baby beef and I learned the anatomy of beef thru this process...my job was cutting chunks into small stew meat size...our meat cattle was done by our friend who had a slaughter business in town...we usually got our meat cattle back in large plastic bags and we did the finished work Cheers from Maine.

If you make yourself somewhere to hang the quarters, you’ll find it easier to break it into primal muscle then deal with those on your bench. For your first time ever you done an excellent job. I’m a butcher from Australia. Next time if you could ask a local butcher to give you a demo you’ll get it easy. Hear in Australia most butchers would give you a hand. Again great work, your in-laws are fantastic help. I’ll continue to watch your progress.😊

11 hours! You guys will sleep well. It really was a good video because those of us who like beef in any way ,need to know where it comes from and how it gets to us. It looks very emotional and physically draining. I can tell Lorraine was exhausted, butmom and dad were working circles around you three! My mom was the same way God bless her soul. Looks like you will have enough beef for quite a while and yeah, maybe one at a time is enough.

I definitely commend ya all for jumping in and doing the butchering yourself instead of taking the slaughtered animal to a commercial butcher as so many other YTers do. If you raise it you should have the consciousness and ability to not only put the animal down yourself but also do the butchering yourself. You commented you left the beef hanging for 2 weeks. Check with most butchers and they will tell you letting beef hang in the halves or quarters at least 30-45 days or even longer if possible will result in better tasting meat and more tender meat, especially your steak sections . Bearded Butchers on YT has a lot of great videos on processing animals and the various sections of the animal. Congratulations on tackling the project yourself.

Considering it takes my family of 3 adults and a 7 year old 2 full days to process a deer completely, I am impressed! We have a steer processed every year and I don’t even contemplate doing it myself lol. Well done! 🎉

When either my husband or I harvest a deer we butcher it ourselves. It is a satisfying feeling putting it all in the freezer at the end. I do take the meat for grinding though.

A good sharp knife is worth its weight in gold in home butchering. When Jason opened the box with all the knives banging together I thought I would have a stroke! I've always been told by the old-timers (I'm 88) that if you take good care of your knives, they will take good care of you. Other than that it was a GREAT video! Keep it up, and God Bless!!!
