My Dad was a large animal veterinarian. We raised our own steers and processed it ourselves twice a year. We had a family of six. He considered this our education. We also raised dairy calves to pay for our college. I am 71 years old and I am very glad to have this skill set!

I'm so impressed. You are able to be super picky and extra careful to remove bones and stretchy fat and know your grind etcetera. Just excellent. Your so set up with organic meat.

We have processed deer many times, but a steer, never! It IS a family project that teaches many skills. Memories and food both being made at the same time...priceless! 😍

My husband and I eat a half of beef about every year and a half. We also give away extra burger and enjoy meals with family and friends.🐮💙

I was Penelope’s age and running the grinder in my great uncles butcher shop. That was a LONG time ago. Congrats on a freezer full of beef!🎉

If it’s just going to be your family eating it, I think it will last you 16 months to go through all the beef. Because you will go through the ground beef faster than the other cuts. But Lorraine really like to make soups and stews and roast and things as well. It might last a month or two less but I am thinking a family of three sixteen months. I am sure you blessed Randy with some of the need for helping you all with all the processing.

No way will it last anywhere near 16 months... he said 250 lbs of beef, that is no more and probably much less then 250 meals for 3 people, even if his family only eats 2 meals a day that is 730 meals a year... 250 meals is only 1/3rd of the required meals for only 2 meals a day and your going to be using more then 1lb of beef for a lot of these meals like steaks, roasts, etc. where most people want at least 6 oz each, etc. This beef won't even last them a year, probably something around 9 or 10 months and that is with taking into account having pork, chicken, garden veggies, bread, pasta, etc. to also eat.

I worked in a butcher shop so I was able to practice breaking down pork, beef, chicken. I enjoyed the process. I can appreciate the amount of work it takes.

If you were to take to a Butcher, you would end up with far less. Loved watching your videos on this process. And loved that the whole family participated.

It was so worth it! You were able to hang it longer, keep everything you wanted with no waste, you didn’t have to pay someone else to do it, AND you developed a new skill. Way to go guys!

Liver absolutely changes the flavor of the ground beef. Great family tradition. Get some tools like bone saw to speed up the process. Do a lot of the work on the band saw before knife work begins. In 5 years it will be a 1 day job.

Hanging 900pound . brought home about 600 pounds. At less a year. But we shared alot 2 kids family & 3 neighbor. In pass .( purchase $600 ) (butch $540? ) (raise feed $600.?) I had meals plans ( like) monday steak / tue pork / wed church , hamburger & French fries day/ Thursday chicken / friday ground beef day ,chili hot dogs, spaghetti, chilies, grd beef soup, beef stronganoff, taco, Sat left overs/ Sunday roast , ham, pork roast ,

I've always wonder if your get the same animal you took to market back. In 1969 my stepfather took our 4 pigs in and it seemed like it wasn't that much back. Mom wasn't happy with the amount. You know your out come and from birth to processing. Quality, cleanest.,and amount. Cost$$$ would be out of this world at these prices now. Also a family affair. Great work guys. Happy new year 2023

The trick when making your own ground beef is to fry up some to see if you need to add more fat or less.

I would say that beef should last your family almost a year. It was great you had Lorraine's parents to help.

Liver is also good for fishing. Go to the dollar tree and buy nylon stocking. Tie the liver in nylon bite size. Put in freezer . When ready for fishing put in refrigerator the day before.

Tongue and heart are the of the really choice cuts. Please don’t grind them up or feed them to your cats and dogs! Tongue: 35 mins in the instant pot with an onion and a couple of bay leaves. Remove then peel the tongue and then braise using the brith from the IP. 300 for 90 mins. Remove the tongue and slice into nice coins. It’s beyond delicious. Don’t over flavour the braiding liquid. Just onion garlic and celery. Heart is wonderful stuffed and slow roasted. Leave so of the fat on the outside. It is just delicious after being slow roasted.

My brother always threw the ribs and upper necks away from the deer. I took them and cut the ribs in half...put that in the pressure cooker for 20 minutes...smoked it in the smokehouse for 4 hours...then bar-b-qued it! He hasn't thrown ANYTHING away since!

We process our own beef. We used to take it to the locker plant and had them kill and process. Now there is at least a year on a wait list not to mention the last time we had a beef processed, they charged us $500.00 just for the processing and some of the cuts were not the way we had asked them to do it. We now do it all ourselves so we get the cuts the way we want them. It takes us three days. We have three grown kids with families of their own and they hep with the processing. One steer will feed all of us for about six months. We also do hogs and chickens on our own. We like it that way. 😃

You'll get faster every time you do it and it is a lovely skill to know. My dad was a butcher as an occupation and we did our own and it's something that I still love to do.

It should last you for 18 to 24 months with chicken and pork that you have- That's why vacuuming is a better solution, makes it last longer. If you go too slowly through it, you might consider canning some of it.

After you make the bone broth, you still have the bones left...... You can throw them in a fire which will make them extra brittle... Then can break them apart and basically make a powder... This is called "bone meal" is fantastic for the garden!!

I have heard stories of people not getting or getting more than what they sent to the processor, this way you are guaranteed to get what you raised.

We processed 9 hogs in 2 days that were so big they wouldn't fit in the scalding box but never process beef. It for sure was a job and experience for us but so worth it in the end.

We are a family of three as well. We go through the steaks really fast, within a couple months. But the ground and roasts will last us almost a year for about 300 lbs of freezer meat. Thank you for the videos, always great content.

Always worth butchering all animals yourself. At 16 my stepfather put me through his "college" lol. He was an old farmer. Since then never taken anything to a processor. Love watching you guys go through it and just jump in and learn. You guys did awesome.

We have 4 people in our family, and we purchased 1/2 of a cow in Spring of 2022. We expect it to last us all through 2023, so about 18 months. You all did such a phenomenal job!!!

I think for the other cow you should take it to the processor just to show the difference in return from doing it yourself vs taking it somewhere. Would also maybe help identify any cuts you missed or maybe ones they missed that your family enjoys. Would be really cool to see the results.

Processing the steer yourself not only saves money but you get a lot more usable product. Even if we take the chickens in to be processed we don't get the feet or the organs, just the body and the necks. That's how it is here where we are. If you don't know how to tan a hide I'm sure you could find some one that does.

I totally agree about the educational quality of doing this sort of thing. Our neighbors with their cattle ranch down the road invited me over this week to help slaughter and process two of their cows. I'll be going back in about two weeks to learn to butcher them, too. Great experience, and fascinating to get hands on with!

When I was at home, we put up half a beef a year. There was 4 of us at home, and my sister was there alternate weekends and half the summer. We also had a lot of company. We ate rabbit about three times a week too.

Wowza! You all really nocked this out of the park! Your tummies are going to be happy-happy-happy!!!! Tradition for sure. It’s a lot of money to use the processor. When I was in FFA 18 months was the average age before processing. Like Loraine stated, it’s a perfect size for your family. It will take your family 278 days to eat all the beef. I suggest that the other steer be processed before the end of spring or early next fall. In the “no flies” season and when your garden isn’t in full swing. 😊

14:30 she makes a great point about this being a good skill for the family, it's a tough tradition to try and keep up with though. Perhaps the meat will last you longer than you expected though, and next year it won't be necessary to break down something as large as a cow, it would probably be pretty easy for y'all to break down a feeder pig together. Your next big investment sold be a meat band saw. It will save you at least a day on a steer. Also saves lots of time for pigs too.

If you are going to do it on regular basis it might be useful to buy a Meat Master Electric band saw to cut up the meat. My dad had one and use to do a cow about 3 times a year and it was worth it.

dear knife victims buy a whetstone. a honing rod is for straightening. an automatic slotted sharpener is for dulling/chipping. a whetstone is immediate and will keep the blade from slipping when used. buy a whetstone. I recommend KING 4k/6k to start

You should invest in a chamber vacuum sealer. We just bought a vac master that can do 4 bags at a time in under 20 seconds. We bought one from MEAT and hated it. It can only do one bag at a time and the chamber is not big enough to vacuum seal chickens. We get our bags from Ultra Source. You raise all your own meat so it would pay for itself in no time. We have a butcher shop so it has already paid for itself.

It will go faster the more times you do it. My mom, dad(disabled) aunt and uncle butchered a beef and a pig together. They had the wood stove going to boil the liver, hearts and such as they make sausage to put in the smoke house. All pork ham and bacon was hung in the smoke house so there was not as much work doing the pig but you know how much work is in doing the beef. The steaks were made into roast to make it go further. We never ate hamburgers pork chops or steak when growing up. But we did have delicious sausage in the smoke house. Three kinds. Liver, blood and one other kind which was the only one i would eat. You did good for the first time.

I think it is so great that you guys process your own animals.. In a couple years you guys will be able to add pig and beef butchering classes to your repertoire. A skill many in this day do not have. My family grew and butchered our first pig ever this year. It is a ton of work but we'll worth it in New skill and saves alot of$

I know you are probably aware of this but raise Dexter Cattle, they are about 1/2 the size of Angus, etc. They are also docile and easy to care for.

As a family of 4, a whole 1000# beef would last us a year. We would get around 400-450# of meat. Of course, we had chicken and pork as well. My husband's family always processed their own meat (chickens, hogs, steers/deer) but we chose to have them sent to processor. Just made sense from time/money standpoint.

Run some cold fat through the grinder when you start and it will help let the meat slide through easier. Use bread when you are done and it will clean it some to make cleaning easier.

With my dad being a butcher alittle advise for the burger. Get a scale and make a ball of burger like a softball and weigh it. It gives you a rough idea to go off of and just check yourself every dozen or so. It will save you alot of time. It's doesnt have to be exactly 1.00 lbs

How wonderful to raise and process your own beef. Cabela's has the best vacuum seal bags. Thicker and good channels to remove air better and cost less than FS. I get the 1 lb pints and quarts already cut. Saves a lot of time too. Also, I recently made liverwurst , recipe from The Spruce Eats and it's very good. It called for pork liver but I used beef. I enjoy your channel much.

Another thing I want to note left you a message in the freeze dry egg video 2 months ago video. if you could look at that but, your ice box video when you installed at the farm Justin's homestead with the bot cooler or something I like that opened up my mind to other possible things with that unit and style. Easy, affordable and DIY all-in-one perfect. I was watching you when you first got there thats how long I have been looking for a price of land to try out for a couple of years to see how well ke it and to build affordable housing/ homestead places for others in need

Our main meat is beef and chicken. I roughly figure 4 lbs of beef and 4 # of chicken for my self and husband per week. its rough, because sometimes the adult kids or company comes over. WE also take beef to the lakes to cook over the camp fire. Its amazing that way.

8 pounds of meat for 2 people for a week sounds like the bare minimum amount to me... especially the chicken which doesn't stretch as easily as beef does with other ingredients added... are you only eating 1 meal a day? Or are the other 2 meals completely meat free? I guess you could mix the beef or chicken with a bunch of pasta or bread or veggies and then eat the 1 meal all day as leftovers and stuff but still...
