Brisket Throwdown between the Weber Ranch Kettle vs Texas Smoked Brisket. I love smoking BBQ brisket on charcoal kettles so this Rancher Weber Kettle was big fun...no pun intended. I used the Slow ’N Sear XL & KosmoQ Cow cover and it turned out better than even I realized. lol (That will make sense if you watch till the end)

Lovely.. Was cool to see how little the brisket looks in there. I have 26" and seems just right for most any size brisket. Also use the S&S XL in there for a good 8 hrs. 👍 thanks for showing.

I absolutely love the Ranch Kettle. Yeah the brisket didn’t look that bad. I have said the same stuff about my cooks when it’s late, I’m tired, and I just want to get done, then later realize that it was actually pretty dang good. Thanks for the honesty.

Glad to see the Ranch getting a true cook although the hot dog was gold. Anyway, this is only the second time I have seen a cook on a ranch. The other time was Steven Reichlin. That's pretty good company buddy. It's pretty hard to justify a Ranch. That said if I ever see a deal on one I'll snap it up before I have a chance to think about it because after all, they are just so stinking cool. Would be ideal at a catering event. Or doing a hot dog.😃🌭🍻

Hi Justin, Brad here. I did a brisket yesterday on the Kamado big joe, feel like the same way , it was a weird cook. I had a 8lb. In change and it took 10hrs it wasn't even butter after 8 and I even put in a foil pan with a pan to go under it , though it wasn't a cookie sheet . I had to finish it in the oven , hr10 it was finally money and put it in a plastic cake saver container lol.... it worked so I went with!! Like you I tried a taste and put in the fridge, came out nice. I use all the pointers from you and your buddies. I used Oak Ride BBQ spice- the pork and chicken one, believe it or not it was tasty .. Thanks for a great Video again !

Hey Justin Nice video thought about buying the ranch kettle, but my wife thinks i have to many grills. I just showed her the video of the one you did with all your grills so I’m good to go for now. I know how it feels to not be able to get the the cut of meat you want. I have learned from experience though of drying out a brisket is to always inject if it’s not prime.

Great video, as always. I’ve never agreed with Myron’s technique of putting a brisket in a roasting pan because I’m a big fan of bark. Do you think the loose bark on the underside of your brisket at 20:50 is due to the roasting pan?

Love the videos! You've made me fall in love with the Slow'n'sear and the Weber Summit Charcoal. I actually just ordered a Weber Summit Charcoal grill and it is on its way. After watching you cook I can't imagine using it without the Slow'n'sear low profile, however the item was discontinued. I reached out to ask slow'n'sear what I should do and they never got back to me - do you have any ideas for me? Happy cookin!

Justin, you are one of the greats! I paused the video when you recommended Dski Grillz and your expression reminded me of an animated short by Bill Plympton. The only way to see it on KZfaq is to go to the channel of Alexander Berezkin and look at the 4th video. There are only 4 videos on his channel. Hi Justin, love your channel! Quick question: Of all the briskets you’ve cooked, how many have you panned? Guessing that some of the inconsistencies you experienced in this video are directly related to it. I’ve tried panning many times and have always found wrapping consistently produces a superior product. Also, have you ever tried tenting(partial wrap) your brisket? It’s a great way to keep your meat moist, protect it from too much smoke and still caramelize the fat cap. Anyways, keep up the great content! Look forward to the next video

So, I’m particularly interested in how you rejuvenate a brisket after it’s been stored in the refrigerator overnight. Many of the brisket cooks I’ve seen result in a finished brisket long after normal dinner time. Your comments would be helpful. Thanks! Great channel.

Ran into the same issue with finding something quality, mine came out well good taste an tenderness but coulda been way better because the quality of the meat. Cooked mine on a regular kettle.

Would it help or hurt to put some liquid in the pan before you cover it with foil? On the one hand, you might cause it to stay more moist. But on the other hand, you might ruin the bark.

Brisket? You could cook a whole cow on that thing. I've had those kinds of cooks where you taste the food when you finish and it's just ok, but the next day it tastes great. Keep the vid's coming, thx!

They make a chafing dish pan that is as long as the one you used but half as wide. I fill it with water and run a charcoal path along the Ranch’s side. 6 racks of baby backs fit easily. Plus at parties I push the coals back and use it as a heated serving table. I named mine “Fat Tuesday “

that kettle is massive!! you did look a little worn out ...we have all had those C or B briskets, sometimes the internal marbling is just not there. i pan and use cooling racks as well, but flip the cooling rack upside down so the little legs are facing up.....so my brisket can rest in the juice.

Hi Justin, I would like to offer an observation: whenever I watch a brisket video on the Tube, the instruction is (usually) given to wrap the brisket tightly so that it doesn't "steam". In your video, when you took off the foil cover and the brisket was sitting on the rack in the pan, there was quite a bit of liquid in there, and it was steaming. Then the process was repeated while you continued the cook. It seems to me like that liquid would have been better served by remaining in the meat. I am not a brisket expert, but I strive to keep every drop of moisture that I can from being drawn out.

That is exactly right....When placing brisket into a pan and then seal it with aluminum foil, the brisket must have liquid in the pan........minimum 1 cup beef broth I did quite a few briskets that way, and there is something else...I turn the brisket once during the wrapped up process. .....so if I start with the brisket fat side down, then I turn it fat side up about halfway through the cooking process, just to let the brisked absorb all the moisture it can, and I would not use any kind of cooking rack to elevate the meat from the beef broth... Now if you wrap it with AF then it must be tightly wrapped.This brisked was dry a bit exactly for the reason you said...

You got that right! Such a marathon. This one was probably the hardest video I've ever made. Glad I finished though. Not every brisket is the same for sure. I would have devoured it...............nice bark. How was the point when you cut into it? There is usually a lot more fat in the point. Happy 4th of July Justin and family. If I can find a brisket tomorrow, I am going to throw one on for the 4th.

I would love to see how many baby back ribs can that kettle handle. I used to make a lot in my 26 inch weber, probably like 12 to 15 at a time. It was crazy

LOL. Ironically, no beer that day but I am off the Mt Dew but I replaced it with water. My wife and I made a decision...and by that, I of course mean my wife decided I needed a Mt Dew break and I "decided" I can't win and argument with my wife. lol I didn't realize how tired I was until I watched myself slurring my speech while editing. That dust storm really messed me up.

I didn't see a thing wrong with that brisket. I'd take that in a heartbeat. That new Sony ZV-1 was looking good! How do you like it so far? I'm thinking that might be my next one.

Very happy with it. The af is much better than g7x m3. For what it’s worth I also did the introduction and everything that first night on it as well as the taste test camera that was focused on the brisket. So far I’m really happy with it. The skin softening thing...not a fan. Lol
