So I just made this for the third time tonight, I remembered the recipe by heart already but just wanted to come back to the video to comment this: the ingredients you use make a HUGE difference. The first two times I made this it was with regular store brand canned tomatoes and mediocre pasta and it did come out really good both times. Today, however, I made it with real canned San Marzano tomatoes and an artisan pasta and holy crap, it was maybe the best sauce I've had in my life. I mean the depth of flavor you get with the real deal tomatoes and the texture of a legit hand made pasta is insanely good. The simplicity of the sauce really lets high quality ingredients shine through, worth the extra money every single day of the week. Great recipe!

Wow😳, found an old one that missed lol. Weekdays I start onions and garlic in olive oil, add a tsp tomato paste, about 1/2 tsp anchovy paste and cook out, gives all day taste, I do foodmill San marzano tomatoes and add a tsp sugar, when shut off after 15-20 min add fresh parsley and basil . Done. 35-45 min is goal. Reserve half sauce and toss pasta like you did, after in bowl add rest of sauce on top, sometimes have meatballs already fried, or do sausage and/or a pork chop that wasn't quite ready for the big show🤣😂

OMG! I never realized that I could be more delicate in the beginning with the basil. I always added it at the end because I new it was delicate and I didn’t want to turn the color or bring out the bitterness. I never thought about infusing the oil with a cold start! This is a lovely way for novice cooks not to over cook the garlic too. Thanks for this lovely basil 🌿 infusion!

Just ate this and wish I’d doubled up so I could eat it again tomorrow. The cold oil and adding the pasta not quite done to the sauce I think is what makes the huge difference. Best sauce I’ve made by far thanks man

This is the best, weekday sauce I've ever had. My Italian grandmother and mother would often make a "quick marinara" growing up when there wasn't a lot of time and they weren't as good as this! I hope all of your non Italian viewers who grew up with jarred sauce learn this and never by jarred sauce again!

I have been making my Granny's recipe for spaghetti sauce for years. I came across this video in a mindless KZfaq binge. My wife and I were doing our annual, fall tomato harvest from our home garden. We can fresh, whole tomatoes and the less-perfect tomatoes are used for tomato sauce. For making the tomato sauce, I thought of this recipe. We can a lot of whole tomatoes and for the less-than-pefect tomatoes we use a machine that remove the skin and seeds and produces "sauce" which we reduce then can in pint jars. It occurred to me that the process you use for "milling" the canned tomatoes is the same we use for "milling" our home-grown Italian plum tomatoes in our machine. I have no idea how good those commercial, canned tomatoes do in this recipe, but I expect our "pre-milled" and canned sauce will be at least as good.

Eating this right now... Wow. Forgot to pick up fresh basil, so had to settle for dried, but, the flavor in this sauce really pops. I've tried 3 of your recipes the last couple of days and they've all turned out amazing. I'm dying for summer so I can get some peak 🌽 and try those elotes! They look so good. I like adding some red pepper flakes and fresh cracked black pepper for some heat. I also tried adding some very thinly sliced,fresh basil and it turned out amazing. This has been my go to pasta recipe for almost 2 years and it never fails to impress people.

@@bumbum5580 I'm pretty late but this might help. You can boil the Tomatoes (cut the top and make a + with a knife at the bottom so the water penetrates the tomatoes). Peel the skin off, and then follow the recipe as it is right now

I tried soaking the spaghetti in the sauce and it soaked up so much it turned almost orange and tasted a lot better! Looking forward to making key lime pie with egg yolks and using the whites for northern Italian fried chicken! (Love how you mentioned how the recipes ingredients go together) thanks for all your videos and keep up the great work!

I add a salted anchovy to my oil with the garlic and basil. You would never know its there, but its like natural msg. Just enhances the flavor

Love the show and just your overall swag with cooking! Much to relate to! As an Italian living in Missouri now, I gotta say the ingredients, especially the tomatoes you use, make ALL the difference. Where I live I have to buy whole/peeled tomatoes and then puree them, buy it's sooo worth it! Make it your own with the amount of garlic and salt and even adjust what's in your sofrito if you want, but less is more and great job to you expressing that, my friend! 🤌

dude, thank you so much for this. youtube algorithm gods have blessed me with this channel and i've binged like no other. i've got absolutely 0 skills when it comes to cooking however i have the burning desire to learn how to cook. i decided to try making this sauce and it has completely changed my life. while my rendition is nowhere near perfect, i was able to make the best spaghetti i've ever made in my life. my family could not believe I was the one that made it. this channel has completely changed my views on pasta and I have a couple more dishes im dying to try out. the way your videos are laid out are just perfect for a beginner like me. everything is explained without over explaining. it's simple and to the point. the editing style is top notch as well. all in all, i can't be happier i've stumbled across this channel.

I made this tonight, halved the garlic amount for my two and half year olds mini wheels pastas she loves so much. She was dipping garlic toast in the sauce and going nuts for it! The toast ran out and she started scooping hand fulls of the sauce into her gob, it was hilarious. Thanks man, she loves it!

@@lt1caprice57l Agreed. I find when you have a chunky sauce where you barely break up the tomatos and cook it, the sauce Is thin and watery. Definately like to blend mine for a better consistency.

Seems like a cool dude! Some good recipes - no doubt. I cook for enjoyment and for my family. I get a kick out of making something they like. It also calms me as well. I'm a Italian from NY, living in Kentucky now (yep, long story but all is good) - so good Italian food?? Hard to find. So I rely on making my own meals, Italian or other. I rely a lot on people like this gentleman to help me. Again, I have enjoyed listening to him and learning from him. He seems real, creates meals that are tasty and simple and most importantly, meals that would appeal to many people no matter what culture they may derive from. Thank you for sharing.

I made this today for the 1st time and am already looking forward to next time. This is so simple and delicious! Many thanks for covering the basics of the sauce, how to cook it, and also how to finish the pasta in the sauce. I followed the steps as best as I could. This turned out so good. I also appreciate your video production too, with what seems to be a short sum up of the steps in the recipe near the beginning.

As a greek, we also grew up with this type of pasts, my mom would make it on really fast nights during the week. When I make this, i enjoy using tomatoes from greece.

I stumbled on this channel the other day and watched like 20 of your videos in one night. I am a bit of a cook myself and I have made my own sauce for years. Definitely going to try this recipe as I love the simplicity of it. A sauce with no onions? Hey, I'll try it! (Although I can't NOT add oregano...it's my favorite herb so that would be the only thing I'll do differently). haha. Great content!

Onions are actually really nice in a tomato sauce, you just have to give them loads of time on low heat and don't chop too much as well. They help to balance out the flavour with a little bit of sweetness against the acidity of tomatoes. My advice is, if you have some time to spend in the kitchen, use the onion and make it disappear into the sauce, it really makes a difference - tomato sauce has to be rich, coma.

Used bucatini noodles for this recipe. 10/10 through an extra clove of garlic in and I couldn't believe how good the sauce was. The parm cuts the canned taste out of the tomatoes. so damn good

Love this guy’s stuff. Simple…to the point and zero fluff. Thanks man..you have another fan. The fantastic thing about this recipe is that it will cost you about 8 bucks to make at home…try and get that in some overpriced restaurants.

Made this today and it was very, very good. Best quick sauce recipe I've tried. Tasting it while I was cooking it, I was a bit skeptical, but it really came together once I put the pasta in and it cooled a little. So as a tip to my fellow viewers: keep the faith, even as you're thinking "uh-oh... not a lot of flavour happening here." It needs to be on the pasta to really bring out the tomato, basil, garlic and the umami of the parm. Possibly I started out with a little too much oil (can sizes are smaller here, but so was my pan), because a little kept separating out even though I boiled it vigorously enough to create quite a clean up job (fridge is next to the hob). I also ended up using a half teaspoon of sugar (locally, I can only buy an Italian tomato variant, grown and canned here, which I assume is tarter than actual San Marzano tomatoes). And I found out the foodmill my mum bought at Aldi 8 or 9 years ago is an awkward piece of crap, but that's not the recipe's fault. :P

Thank you! Remember you are essential reducing this sauce. Like a stock that is thin doesn’t have a ton of flavor. But as it reduces flavor concentrates. Same thing here.

Great video Steve! I'm going to look for those certified tomatoes. That looked so good and a great base for spaghetti, and a very great tip on cooking the pasta to al dente and letting it finish in the sauce. Took me years to learn that and it makes all the difference! Now I want to see how you make the meat balls for that spaghetti :D I love Italian food, but unfortunately have cooked very little of it.

@@likearollingstone007 Wow. There are some good San Marzano tomatoes grown in California. Maybe check those out. I’d rather buy as locally as possible if the taste is good. In summer I’d use fresh tomatoes for sure. People might shriek about it, but I think it’s actually more authentic to Italian cooking to use what you have available locally. Also $5 for a can of tomatoes is a no for me. Spend that money on a good olive oil. From California 😂

Forgot to take meat out of my freezer to cook for dinner.Made this recipe tonight instead of just getting take out. It was absolutely delicious! My family loved it and it was on the table in 30 minutes. Can’t wait to make it again!
