I'm a chef of 15 years. Using medium heat you're not cooking your eggs or batter, like at all. That's just keeping them warm enough for bacteria and possible salmonella to thrive. You want to get the Pan super HOT first. This also helps prevent food from staying cold in the middle while the outside burns. Basic rule if your oil (or whatever) doesn't sizzle when it hits the pan, it's nowhere near hot enough.

Ummm, I’m standing at my stove making eggs for breakfast as I type. My stove is on medium low. On a numerical scale it’s set on a 3 1/2. I wish I could send you a video of my eggs clearly being cooked and popping grease on my stove. As a “chef” you should also know very well that each stove operates differently. The concept is the same but the amount of heat (and how much it puts out on a particular setting) varies by stove. Not to mention the fact that in the USA, all WHITE eggs sold at grocery stores are pasteurized 😬

I've always made eggs on medium heat, they always turn out completely cooked. If I turn up the heat on my stove any higher when making eggs specifically, they'll burn before I get to scramble them (I only eat scrambled eggs, or hardboiled eggs for reference). It may need to be higher on your stove, but for mine medium heat works just fine for 4 eggs, when I'm making for both my brother and I, and it's even better for 2 eggs, when I'm making for just myself
