Wandering the halls of Valhalla, he saw a handmaiden he'd never seen before. Thinking she was either a challenger or another conquest, he bellowed in his normal boisterous manner, "I'm Thor!" Her reply? _"You're_ Thor? I'm tho thor, I can hardly pith!"

I'm not a big fan of raw pith, but "dry pickled" citrus pith from Asian markets is delicious. It retains a very strong fragrance while also being mildly sweet and quite tart - almost no bitterness, probably due to the bitter compounds being neutralized during the dry brining/pickling.

A friend from Algeria (who was born in Germany) used to send me candied lemon peel. She grew the trees in her garden near Algiers. Some pure, some with dark chocolate. Those always were the most precious delicious treats ever. So much better compared to what you can buy. She also candied melon (watermelon and cantaloupe). It sounds wrong first but it is amazing actually. And her dates from her date garden in the desert were something else too. No plain old Deglet Nour but some local cultivars. I miss her. She got into problems for being atheist and democracy support 😢

I've got one of these growing in my back yard, the tree was mislabeled as a normal lemon, but it took years after it reached maturity to produce any fruit. Nowadays though it is a very productive tree, about half the year from mid spring to mid fall it gets a few new fruits week and with how large they are that's more than we could ever use. It's growing in kinda bad conditions so during summer and fall the fruit is dry without a lot of watering.

I think someone I now has a tree with this grafted onto it, the main tree is a pomelo relative. I've gotten normal lemons from it, so the pomelo might've crossed with a normal lemon to make something like this. It doesn't look the same though, it is close to the same size (a little smaller) but maybe 1/4 to 1/8 inch of pith only. Tastes like a lightly sweet lemon.

Candied citrus rind is SUPER underrated - just make sure you boil and discard the water a few times to get the bitterness down enough. Raw sour citrus is also super great, but I try and stray away from super acidic foods now because it makes my teeth a bit sensitive for awhile after... really unfortunate since raw limes and lemons are delicious.
