in the Caribbean we make goat soup with tripe .we add dumpling ,cassava,yams.

Thanks for your comments. The spice mix required for this dish are all sourced directly from Africa and will be difficult to find outside the continent. Most African stores will probably have the PepperSoup Spice already made up. We also have it for sale on Amazon or our website. Stay cooking!

@TheYagayaw: maybe because she's cooking all of it. You only need to use a separate cutting board for things you are not going to cook!

Let's not get too " precious",the onion/shallot is not going to be consumed raw. You only need a separate board for an item that would be eaten raw. It'd be an issue if you used that same meat board for say,slicing up some fruit for fruit salad.

Like I said before, it would be better to mention the country because you are doing a very good job that is going more and more popular and professionalism and authenticity should go along with it. "West African" is too broad. We d'on't have this in my country (Burkina Faso). Peace!
