Great video 👍. I loved the end with the baby eating some delicious cray 👌. My dad taught me to put the crays in the pot of ocean water and wait until it comes back to the boil, then 7 minutes and there done. Then ice slurry to chill. Probably takes the 3 minutes to come back to the boil so roughly 10 mins your right 👍. Obviously bigger the cray means slightly longer cooking. Great video 👍

Why in the world did I watch this? I know I'm not gonna get lobster at this hour. All I can get is Hungry Jacks or Maccas. So so sad!!! Great video! I'll need to get my hands on some crayfish soon!

Thanks champ, however, 'opaque' is the opposite to translucent. You are using it incorrectly.

8:37 I am not in any way criticizing your methods (as you are the professional), but I do eat lobsters quite frequently (which I prepare at home) If you're going to split the lobster before serving, then why not split the lobster prior to putting it in the steamer? A split lobster would certainly cook faster (10 minutes) and also cook more evenly. A big plus is when the lobster is split, you have the chance to pluck out the stomach and its contents prior, at it is bitter and gritty and that bitterness could leach into the surrounding edible parts.

in a fridge for 12-24 hours, if you want to do it fast, chuck it in very cold water and swap the water out when needed

The skin of the tail is very chewy and not suitable for sashimi, you should use the center white meat for sashimi, also when cutting the lobster in half, yes keep the mustard/roe/brain whatever, but the part above that is the stomach and contains whoever the lobster ate last and should be discarded (the dark brown part that connects to the mouth) also you should remove the white intestine.

western rock lobster we just call it crayfish, but trying to cook an eastern rock lobster the same time as a western rock lobster is gonna give you food sickness

It's not lobster .thay have big claws . It's crayfish . Ahhhhh get this right will YOU this is not American it's Australian
