Ingredients
1 pound Chinese or Japanese Eggplant
A few stalks of scallions
1 sheet of nori cut into square to fit the bowl
Sesame seeds
Cooked rice or your favorite grains
Cooking oil
Sauce
3 tablespoons mirin
⅓ cup of hot water
1 teaspoon kombu dashi or kelp powder
2 tablespoons light soy sauce
1 tablespoon maple syrup
½ teaspoon sugar
