♡ recipe: mexican style quinoa
- 1 onion
- 1 bell pepper
- 2tbsp salsa
- seasoning to taste
- 1can black beans
- 1 can sweetcorn
-1 cup quinoa
- 1 diced tomato
-2 cups boiling water
cook on low heat till all water is absorbed 🥰
♡ recipe: lentil kofte
- 1cup red lentils
- 1.5 cup fine bulgur
- 3 cups boiling water
add your water and red lentils to a pot and cook till lentils are ready. add in your bulgur and close the lid and let it sit for 15 mins to soak up the remaining water and cook through. Once this is ready:
in a seperate pan:
- 1 diced onion
- 2tbsp olive oil
-1 tbsp tomato paste
-1 tsp red chilli flakes
-1 tsp dried mint
brown the onions in the oil and add the rest of the ingredients listed above. then add this mixture to your bulgur+red lentils once that has sat for 15mins. ad some salt to taste and mix this all together (or knead by hand!). Lastly add in:
- a handful of diced spring onions and parsley
- a generous amount of lemon (haha I love the eyeballing we are doing here😂😅)
♡ recipe:blueberry oats
- 50g rolled oats
- 140ml water
- 180ml milk of choice (I used soya this day)
- few drops of sweetener/honey/maple syrup
add your oats and water to a pot on low heat. once the water is absorbed add your milk and mix. let it simmer a little and add in your frozen bluebs 😏
