In this video, I show you a week of eating as a nutritionist. These are (mostly) healthy and realistic meals. This does not represent what I eat every single week, but it can give you a general idea of what I eat in a healthy, non-restrictive, and intuitive way. I like to enjoy what I eat and eat mainly healthy, balanced meals, but I don't obsess over everything being and looking perfect. This is a very real and honest look into what I eat in a week as an intuitive eater and vegetarian!
Hope you enjoy these (mainly) healthy week meals and maybe get some ideas! :)

As an American, I can't tell you how strange it is to see that your diet is essentially: take healthy fresh nutrient-dense foods, combine them and eat them. It's so simple and obvious, and yet soooo unlike what I've been taught! The food culture I know is more complicated and recipe driven, inflexible in certain ways of what it considers meals, where there are certain ingredients you need to create certain dishes that have titles "chile, tacos, burgers, etc.". Seeing you make a meal that includes just rice and chickpeas, or tomato sauce with green beans, this makes so much sense but feels foreign. Very refreshing and inspiring. Thank you.

@lira, I completely agree with you! I do the same. For anyone reading this whom don’t know, Leftovers can be fresh up to 3-4 days. Plus if I think I will not eat the leftovers within the first two days after I make it the meal, I go ahead and freeze it and eat it within a month for best quality. Just take it out of the freezer and transfer to fridge the day before you want to eat it and simply reheat the next day. Hope this helps! Love this Chanel!

@@beckyaquino5007 exactly, sometimes I cook more food than I plan to eat so that I can have leftovers and they save me a lot of time. Legumes are great to cook and keep in the fridge, you can prepare them in several different ways throughout the week without much effort

Thank you for sharing. It was nice to see not-so-commercial like trendy meals. I like that it was realistic yet healthy and interesting. I am Korean, I never had pasta with just cheese. I always think about pasta with heavy sauce... tomato or pesto something. (Grew up eating mostly Asian food and as I moved to the US I am more exposed to European food). Would any cheese work? I love how simple that looks. I also combine leftovers all the time lol create something new with old ones. they all generally go well together... I think because it's everything I like anyway so all of them together still good. unless like kimchi and creamy food.. (ew) Have a good day and look forward to seeing more video of you! Love from New Jersey!

Just found your channel and I am so inspired by your meals and how you eat in all your videos. Next time you do a "What I Eat..." video, would you note how long you take at each meal? As an American, I know we all eat too fast, so it would be interesting to see how long you take with a leftover lunch vs. dinner with the family, etc.

I'll try to note exact times, but in general it's around 30 minutes!

@@Edukalebylucie Thanks! I have been working on being more mindful when I eat and I am at about 30 minutes now myself but was not sure if that was considered 'slow'

hi Lucie. Found your channel yesterday and totally love it. So enjoyable watching your videos. Small question: I thought having fruit after your meal is not a good approach in term of nutrition absorption

Hi! I really love your videos:) However, I was wondering, what are the sources of your B12 intake, since you eat quite a small amount of animal-based products. Also, if you take any suppliment, would you mind naming them?:) I'm glad that I found your channel!

If you really enjoy eating spinach I’d really recommend you to steam it and avoiding eating it raw. It is really really high in oxolates and that could contribute for the formation of kidney stones. If you want a quick salad you can swap it for kale which has similar benefits as well as lower oxolate levels! This girl is amazing, has lots of food freedom and also a really healthy relationship with food, no restricción at all. I like your channel very much!

Thanks for your comment! So glad you like my channel. But for spinach, since I'm not predisposed to kidney stones and the oxalate content in a few raw spinach leaves isn't excessive, it's fine 😊
