To prepare for my plant-based vacation I cooked plenty of sweet potatoes, beans, and oatmeal to provide the bulk of my calories. Then, I put together several bags of mixed veggies, fresh salads, and loads of mixed berries and fruit to stay nourished during our 3-day hiking trip. I share how helpful it is to take the additional time and planning prior to the trip to ensure I will have healthy meals from start to finish. Instead of relying on fast food and gas station junk food, I stayed plant-based and healthy all 3-days! I hope this video provides you with ideas on how to plan for your next plant-based vacation.

Can you share a video on how you navigated your daughter’s diet with her grandparents while you were on vacation?

It was actually really easy. The grandparents know exactly what I prefer and don't prefer my child to eat. And whenever there is uncertainty they contact me. I also pack most of her meals and snacks every time she stays away from home. It takes practice but she's definitely worth it. 💜👧

Hi Karli…I’m from Milwaukee too! Small world. Lol. Any advice for people who try adding in more plants to the diet but end up with GI distress. Like belly aches and too many bowel movements, occasional diarrhea. I want to go full on plant based so bad but end up giving up all the time cuz my gut seems to not like it.

Hi Jennifer! That’s just your microbiome and your body adjusting to the high fiber foods. Slow and gradual changes will help. Especially with things like beans and cruciferous veggies. Good luck 👍
