I usually dry my nettles in my food dehydrator then turn them into a power and put them in a blender with bananas avocado's and moringa powder with oat milk. That shake alone has all the vitamins and healthy fats you need, rich in iron and vitamin k, potassium. The bananas give the shake its sweetness.

When I was training as a chef we had a chef who was 80 years old. He use to tell us that when he was a trainee they put raw stinging nettles into salad. As a 17 year old I just thought either red dead nettles or you put the nettles in hot water for a moment he always said no but didn’t tell me how to prepare them but about 2 years ago I discovered the secret. You put the nettles flat in a paper bag and carefully roll a rolling pin over them. Then they can be eaten raw, must admit I haven’t tried it yet but I’m sure some one out there has. Ps I’m now 70 so we talking over 100 year to when he was a trainee

The plant based options in restaurants is so disappointing, we cook such incredible meals at home and they’re all surprisingly easy. Chefs out in the wild clearly just don’t care or are too lazy.

I love nettle! You can use them to make red bean or chickpea patties/burgers. You add them chopped up in the patty mixture along with the other ingredients and they add such a nice flavor and aesthetic. 🌿Also, when you just soak them in water for a while they significantly lose the sting as well...Thank you for this recipe and video Gaz, I appreciate your content. :)

Actually, I immediately hit the video for the recipe cause my hubby has a bad hay fever this year. But now I’m totally gonna get him that outfit too OMG. Don’t know if it’s scientifically validated but I think stinging nettles could really help. My great grandparents always collected them and made not only tea or salad but also soup out of it. They never had any allergies.

In Italy a Risotto made out of Barley it's called Orzotto. Riso (Rice) -> Orzo (Barley)

a tip for harvesting nettles without gloves @GazOakley is to lift from the bottom upwards, as the stingers are pointed upwards you get stung if you go downwards into them but not vice versa, give it a try, ive harvested many nettles like that and rarely get stung.

I have a huge patch of stinging nettles in my backyard. The neighbour sprays his with weed killer, just like his dandelions. I eat mine and the dandelions as well.

❤ beautiful recipe! Definitely gonna try it. I am growing nettle in a big pot in my urban garden and a secret to have it all season is to always pick up top leaves, in this way it helps a plant to go bushy and prevents early flowering. I am using raw nettle leaves in my smoothies, once blended no stinging sensation, pick it always with my bare hands because I love it, totally working on seasonal pollen allergies specially as a tea and tincture. Seeds are also very nutritional, real superfood - in past, they fed old horses with nettle seeds and they rejuvenated looking younger for sale, I believe it works with us too :)

If you like pearl barley risotto, you should try making risotto with oats! Such a nice texture. I've made it with dried tomatoes and it was beautiful

No, the porcine mushrooms are coming from Bulgaria 80% s. But they sell them as Italian. I've been working in such a cleaing company which ships all her mushrooms for Italy

Ahhhh Wales in the morning… nice to travel while NOT actually getting on a plane and all that hassle! I love to just watch and listen and enjoy your videos where we can see the veggies and the hills and sheep behind you and oh those lovely chickens! They are so sweet as they follow you. I am super excited about this recipe as I have been pondering how the CAFÉ ROYAL in Edinburgh made the green pea and mint barley risotto I ordered last fall when I was over for a visit. I can see more clearly now….. will have a go with your recipe first and then go have a kitchen adventure! Thank you for all of your work and the laughs I get watching. If you dont like the texture of nettles, try using risotto rice. It makes it veeeery creamy and balances out the stinginess of the nettle. I promise you wont even notice the nettle in it.

Add in a handful of local mycelial leaf mulch to that nettle tea fertilizer , it takes it to the next level, our garden is loving it. This is a technique I learnt from JADAM organic farming knowledge system if you want to research further.🌱🙏🏾

Top of the leaves dont sting everyone! You still need a way to prepare them but if you "pinch" the top of the leaf and fold it in half from the top... no pain!

О, прикольно, блюдо из крапивы. Я ещё видел из одуванчика тоже готовят различные блюда, он и полезен к тому же. И в бочку с крапивой его тоже можно добавлять для удобрения/подкормки растений. И ещё туда же добавь старое забродившее варенье. Ну, и сама съёмка на улице на природе добавляет смотрительности к видео

I've had success using amaranth and buckwheat groats as a barley substitute in the past! amaranth is nutty and has a subtle sweeter flavor profile than Barley. I might also recommend short-grain brown rice to resemble the nutty flavor, although it takes longer to cook. Any grain you have on hand will serve as a wonderful spark for creativity in your kitchen and a new spin to this lovely recipe in my humble opinion!

Lol, you with your stinging nettles, you’ll have to put on long sleeves and gloves to find your scissors. The mushroom barley risotto or mushroom barlotto seemed interesting, it looked almost like it would taste like pesto. It may also be good with peas or small broccoli florets. It might also go good with a balanced white wine for a summer type meal for those who would drink wine. I’m still laughing thinking about Romans rubbing stinging nettles all over. Your chickens look like they are doing great and they are also excited to see you which is good.

Can you just imagine new soldier hazing by insisting that newby must stuff handfuls of the freshest nettles down the front 'netherregions'. [Ugh. One of worst practical jokes when I was a typical [East European] child was another 'frenemy' running by and smacking arms, neck or back of legs with a 'nettle buquet'. Absolute agony! Now, I do cook with it and drink tea, but it took a while to get past bad memories. 😅

Have you seen this video on making soap from pineapple waste? I know you normally make food recipes but I wonder if you would consider exploring this in the future: kzfaq.info/get/bejne/rJ6BoaVm1p_Fd6M.htmlsi=cQwDrM0yhhLcZ_Ce I have a LOT of nettle in my yard this year with a very delicate, almost translucent white flower with yellow centers but the leaves are different than your nettle...I'm scared to try using it bc I've been so strongly cautioned that it is poisonous. Eek. I need to find out what the difference is for sure. Great cooking!

Two majorly undervalued ingredients together. Pearl barley and stinging nettles. I'm sure the Porcini gives it a great depth of flavor. I'll be giving this a go for sure. Cheers!

A few weeks? I let mine ferment in the bucket for like 6 months and then it doesn't smell so bad.

How do you prevent mold? Mine got moldy after just a few weeks.

Just wait some more time. I had some too and it smelled and then had mold. Eventually the mold became crusty floating on the top and I easily poured it off. It didn’t even cover the whole surface.

@@Ella.L. Best way to prevent mold is the same like when vegetables are fermented for eating, don't have anything floating on the top for the spores to begin growing on. You could have a weight like a rock exposed above the surface of the ferment but any organic matter will produce mold.

Nettle and water no longer than 3 days, can be used also as a pesticide. After a few weeks that stinks kilometers away 😂
