Did you know that you can use the cooking water of chickpeas and beans as an egg white replacement? It's a great alternative especially for vegans and those who eat plant based.
You can use 2 cups of chickpeas (soaked overnight) and 8 cups of water for cooking. Then, add 1 tsp lemon juice to 125ml aquafaba and mixy mixy :) You can also use 1/2 tsb cream of tartar instead of lemon juice.
