I would definitely also recommen taking in the aroma of the ground beans in each cup (i.e. before you add the water), as well as the aroma of the crust (i.e. before you break it at the 4 min. mark).

can I pour them through a metal filter to get rid of the grounds? seems like it'd be faster for me and still not affect the flavor any

You can if you do it at home. My guess why they do it that way is because cupping usually takes place in a very rural setting. No fancy equipment of any sorts so its an effective way of getting rid of the grounds without having to lug a filter around.

You would typically use water at around 95C, a degree more if you use thick ceramic bowls.
