I’ve done the low and slow like a brisket and they turned out great. I get it to 165 then wrap in butcher paper and back on smoker until internal temp of 203. I am doing another one tomorrow as it has become one of my favorites

Gotta say, Tri-Tip has been my favorite for a couple of years, even over Porterhouse. These both look excellantee, but I'd go with the quick method since the smoked one doesn't have enough fat in it to be truly juicy. Great Job Guys!

You'd be surprised, the low and slow was still plenty juicy but that hot and fast was incredible!

I did 2 separate cooks and low and slow followed by quick sear was a lot better. And less chances of overcooking IMHO.
