Bioware did a Q&A on their Discord to promote Dragon Age: The Veilguard. They only chose to answer one question about accessibility, and simply said info on accessibility options would be revealed closer to launch. Extremely frustrating! This was after they got accessibility complaints for including a lot of flashing lights in their gameplay reveal.

I'll be honest Laura there were games shown earlier at SGF and it's adjacent showcases which showed up in your showcase that turned me completely around because of certain choices in the first showing that made me go this is unplayable for me but with the options shown off I went oh now this actually seems playable.

One example I would give would be Flintlock: the siege of Dawn. I recently played the demo to find out that there's active parrying in game, which is not great for accessibility. I tried to find an accessibilty option to help with that, but nothing in the demo and there's no information from the devs about accessibility, so that lowered my enthousiasm for the game very significantly.
