In todays episode of Cocktails with Ciara, I (a big whiskey fan) am making a VIEUX CARRÉ for the first time! This classic New Orleans cocktail roughly translates to "Old Square" or "Old Quarter" which relates to the area in New Orleans it was named after. It was invented at the famous Carousel bar by a aman names Walter Bergeron in the Hotel Monteleone in the 1930's. It's a well balanced, spirit heavy drink that's not for the faint of heart!

Tennessee Williams wrote a play called "VIEUX CARRE" set in a rooming house in the French Quarter of New Orleans. The legendary Carousel Bar at the Hotel Monteleone, is in the heart of the French quarter, and it was very well known to Williams and many of the major American authors of the 20th century like Hemingway, Faulkner and Capote. BTW-The hotel is also said to be "haunted"...

I’ve been as well and had a vieux carre at the bar. It takes about 15 minutes to make a complete circuit on the bar. It was so memorable and I can’t wait to go back. I just adore New Orleans

that's what I said before you know how usually behind the scenes if they're not in the video Kelly Colin or Sean are doing the the things: perhaps it should be instead of in the video it's Ciara who's making the drinks and they all get to try them.

I've had these in New Orleans in the French Quarter at an Irish pub called Molly's at the market. Cool place, great cocktail now I'm gonna do some day drinking. It's 5 o clock somewhere.

@@barryfletcher7136 yep, back then it was fun to go to the Quarter, Fat city was also rocking and the west end. Drink a little at Molly's then go get the world's best burger at Port o Call on Esplanade.

@@kurtsaxton9665 Back in the early 90's, friends from my darts leagues and I would have a Saturday night tournament at Buffa's. We'd always find ways to work in trips to POC, Molly's, Snug Harbor or Checkpoint Charlie's. Had a couple of very late nights that turned into stumbling into the Saints games Sunday mornings. It was a far better New Orleans back then, sadly.

Fun Hotel Monteleone story. I took some friends down to Mardi Gras several years ago, and we stayed at the Monteleone. One did not understand the concept that drinking at Mardi Gras is a marathon, not a sprint, so got overly hammered the first night there. He woke up with a crushing hangover and went down to the Carousel for an eye-opener. About 10 minutes later he called back up to the room because he thought he was still so drunk that the room appeared to be moving.

Ciara plays ony three weaknesses. First, she's wicked smart. You can tell because she's always so full of background and backstory for these classic cocktails. Second, she's absolutely lovely. Bright smile, great eyes, sweet face. Finally, the voice. I am a sucker for Irish, Scottish, Welsh, and the scads of English lilts. A woman with all three could rob me at gun point and I gladly give her everything.

If you didn't know, FYI, that vermouth only lasts about 7 to 10 days in the fridge. I plan my daily cocktails around my vermouth choice. During quarantine I've been experimenting transferring vermouths into smaller storage bottles with less air exposure. Wine pump is the best for about 14 days in the original bottle in the fridge. About 20-30 days moving to smaller bottles in the fridge. Sometimes I save or freeze the vermouth for cooking.

When having a cocktail (or two) with friends, scenery and soft jazz are the perfect accompaniment. One of my favorite memories was a 1980s sunset in the bar atop one of the World Trade Center towers while listening to a jazz trio (piano, bass, drums) and sipping some wonderful scotch. Alas, I can no longer duplicate that. But your video is a fair substitution. The soft jazz, the wonderful cocktail and as for the scenery...well...thank you, Ciara.

I'll teach you a trick with this: run all of the liquor through a wine aerator. It will smooth all of them out. So, if you prefer to have any of them neat, you'll find them to be SO smooth! In mixed drinks, you don't the edge of the alcohol and the drinks are so much better. The aerator that I use is the Vinturi for red wine. The difference is profound....

the magic of a cocktail, in a nutshell. individually, the ingredients are quite strong and punchy. the miracle happens when you combine them just right. this is one of my favourite drinks.

I love the Vieux Carre! Like the Sazerac, Negroni, Manhattan, Fanciulli, Old Pal, Honeymoon, and Gatekeeper, it's a great introduction to spirit forward cocktails. However, a bar spoon or two of gomme syrup always seems to help the less daring enjoy their medicine, while maintaining the character of the drink. Cheer!🥂

This cocktail is definitely my all-time favorite. I do make mine a bit different though; 3/4oz Bayden Hasel Dark Rye 3/4oz Meukow Cognac 3/4oz Cocchi Storico Vermouth 1/2-3/4oz Bennedictine A very light splash (not even a half bar spoon) of Jagermeister 1-2 dashes angostura bitters 2-3 dashes peychauds bitters (not negotiable) A light splash of fresh squeezed lemon (less than the jagermeister) Orange peel for zest and garnish Mint sprig for garnish (needs a soft wake up... meaning don't slap the sh*t out of it) Finish with a dark cherry with a bit of it juices from the jar. This cocktail is best enjoyed after a light dinner. So have a shrimp salad or something similar before mixing and enjoying. If you want to get crazy, forego the garnishes and use Cock and Bull ginger beer. Only use about 2-3oz. This makes for an interesting and spicy cocktail that is easy to enjoy for those that find the original recipe a bit too... rich in taste. Salute, cheers, let's celebrate life!

Have you ever tried a New York Sour? 60ml either rye or bourbon, 30ml lemon juice, 30ml simple syrup, shaken and strained into an old fashioned glass with ice, then a float of red wine (layered by pouring gently over the back of a spoon) - some recipes say 15ml or 30ml, or specify dry or fruity wine, but I think it's up to whoever makes it.

Now you can make a Cocktail a la Louisiane. It’s a mix between this and a sazarac. Rye, benedictine, sweet red vermouth, peychauds, and absinthe. Cherry for garnish.

If you ever decide to visit NOLA as we sometimes call it, check with those in southern cigar shops as many of us will know where the best bars and restaurants are. I am an owner of a cigar shop in Montgomery, Alabama (Havana Dreamin), and if you want an education in "brown water" (whiskies) most of us are well versed and have many visits to distilleries in Kentucky and Scotland. An alternative trip to New Orleans would be Louisville and Bardstown Kentucky. In Louisville, you must visit the Brown Hotel for a "Hot Brown" and their wonderful bar selections.

I loooove the Hotel Monteleone and The Carousel Bar!!! I used to live in New Orleans, and it is definitely one of the best bars in the city. And it really does spin. It's hard to get a seat at the round bar when it's busy, but the entire place has a great atmosphere.

Recommend making a Penicillin next. It's made with scotch and not bourbon or rye, but is one of the best spirit forward cocktails out there

La Louisiana cocktail is also a New Orleans classic but very similar to Vieux Carre so it might be something you try later. If you want to continue your tour of New Orleans cocktails I would suggest Ramos Gin Fizz, Grasshopper, Absinthe Frappe, and the Hurricane (using the classic recipe not the mix, see www.NewOrleans.com for the recipe). There are others but those will hold you over for the time being.

Aviation 2oz Gin 1/2oz Luxardo 3/4oz Lemon 1/4oz Creme de Violette. Sometimes I do 1/2oz Violette. Shake, strain, serve up with a Luxardo cherry in the bottom, express lemon peel n add to garnish.

As one of the multitudes that suggested the Vieux Carre, I am so glad you tried it and enjoyed it! It is my favorite cocktail to enjoy on special occasions or when friends are over. I don't normally use the the lemon and Luxardo cherry in mine, but I just might have to give it a try! Drink on Ciara!!!

With Bulleit rye, you've got a drink that's right over home plate. You would have to go to a craft distillery to get anything better. I drink it neat, but it's also inexpensive enough to mix if you get it in the 1.75l bottle. Seriously one of the best values in whisky.

@word Oh, there are absolutely some other good ryes. But I can't recommend something like Kentucky Owl to her unless some VERY appreciative fan was willing to send it to her. I can't even find it in the Commonwealth of Virginia. Maaaaybe if she hops over to Gordon McPhail in Elgin...

A modern/recent cocktail you should try-if you haven’t already-is the “Paper Plane” (named after the M.I.A. song). It’s important to use the specified amoro (amaro nonino, IIRC) or some other really high end amaro. It has a wonderful color and taste....it may be a little sweet relative to a Sazerac, but it is a damn fine cocktail.

One of my favorite cocktails, glad you liked it. One warning since I see you have white countertops like I do, Peychaud's Bitters stain really easily even on stain resistant surfaces so wipe spills up right away.

Oh and I tend to use just a smidge more Benedictine as that is where the sweetness comes from, but if you didn't find it too harsh nevermind.

My go to rye for cocktail making is Rittenhouse Bottled in Bond. Usually reasonably priced and a little higher ABV so it stands up really well in cocktails. If you want to try something a little bit different go for the Benton's Old Fashioned. Takes a little more prep as it involves fat washing some bourbon with bacon fat. Sounds weird but is the drink at the end is so tasty.

Ok. So I made this as I had most of the ingredients. I didn’t have the correct bitters and we didn’t have Benedictine. So, I used cardamom bitters and angostura bitters and we had Chartreuse. Giiirl! So good!

Try a 1794, supposedly named after the (American) Whiskey Rebellion of the same year. But, it is CRUCIAL that you use a good sweet Vermouth like Antica Formula. By the numbers: 2 parts Rye 1 part Campari 1 part Antica Formula Vermouth (Optional but I recommend) 4 drops Bittermans Xocolatl bitters. I usually use a part as about 3/4 an ounce, so 22-1/2 ml, to make the drink come out as an American double. A whole European 25 ml. measure is close enough but makes for a potent drink. Mix with ice, strain into a chilled tumbler (rocks glass), express an orange peel's oils over the drink and drop peel in if desired. It is intended to be served neat. It is essential that the quantity of sweet Vermouth match that of the Campari, lest the drink be too sweet or bitter. It is all about balance. This is basically a Boulevardier on steroids: same ingredients (sans these particular bitters) but not an equal parts drink. The Rye shines here. Pick a good one. The trick here is that the flavour profile changes as the sip warms in your mouth: it starts off neutral, sweetens as it warms up (offsetting any fire from the Rye), and drys up as it finishes from the bitterness of the Campari. You miss this effect if the Vermouth and Campari are not in a proper balance. This would pair extremely well with a dark chocolate dessert as it too will have rhe whole bitter vs. sweet balance thing going in.

Have been to the carousel bar many times. My favorite original drink there is a Fleur-de-lis. It is so good!You really need to try it. Going back next month. Can’t wait.

I recommend starting with the lowest priced ingredients to the most expensive so that If you make a mistake, you aren’t wasting the good stuff.

WOOOO my favorite cocktail. I've had it at the rotating bar in the hotel! You also need to see the Original Absinthe House. Arnauds, Pat O'briens. (A hurricane might actually be your match)

Love this. When I got married my husband didn’t want to just go home since we already lived together so he made us reservations to the Monteleone. We did make it to the carousel bar but on a later date with friends. We live down here but with Covid it’s not the same.

Although it would seem to be a very strong drink (and by total alcohol, it is), each alcohol has its own set of aromas and flavors. When diluted by stirring, that is when the drink comes into balance. The Benedictine is not just herbal, but also has a fair amount of citrus also. The single large ice cube is a good idea. It encourages one to sip and savor.

The Carousel Bar is beautiful, very ornate, and very popular but only has a handful of seats so get there early or late. The hotel is also beautiful so stay there if you get the opportunity, they have a lovely rooftop pool cabana.

Bulleit Rye was my first rye whiskey. It's still a favorite. It seems to benefit from some 'air time'. It will get noticeably better as the level goes down. Cheers, Ciara!

Well, now I've finally got to buy cognac... and Benedictine. I've been loving making Sazeracs since your video and just recently bought a bottle of Bulleit Rye, it's amazing. Great call, whoever suggested that! I'm torn between finding excuses to use Luxardos and hoarding them because they're so good but so much more pricey than other cherries. I've been making Old Fashioneds occasionally with Buffalo Trace or Suntory Toki, so those are my whiskey suggestions.

Update: I made it just now and it's pretty good! I think I still prefer the Sazerac and Old Fashioned, but it's an interesting change of pace. I'm curios, so I'll be trying it at some point with the glass coated in absinth ( just got an atomizer to make that easier).

Now that looks like a cocktail that I could get into. I am more of a straight whiskey man, bourbon, rye, scotch and of course Irish...but a good cocktail is hard to beat. Great content and as always, a pleasure to watch. Well done!

I do not really drink at all other than a beer which I understand Ciara does not like beer LOL But I LOVE these VIDEOS! Very relaxing to watch. I am a big fan as a subscriber of the Former Facts Channel and now Try Channel. Of course, I am a subscriber on this channel as well! Keep up the great videos Ciara!! Maybe try a Black Manhattan. I’ve been making these lately with Amaro dell’Etna instead of Averna. Or any Manhattan twist like a Toronto, Brooklyn, Red Hook, etc.

Don’t forget to refrigerate the vermouth after opening. Will go flat/bad quickly, even in fridge it goes off in a month or two and can ruin your drink

All time favorite cocktail, though I prefer to overweight the whiskey in mine. Nice choice of rye and vermouth (those make a crowd pleasing manhattan too). This is a great video series, can’t wait for more!

Only drawback to home cocktails is that’s like $120.00 American worth of booze 40 for the benedictine 30 for the bulleit 20 for a pint of henny and 10 ea for the vermouth and 2 bitters plus tax ( I manage a liquor store) for that one drink

Carousel bar is awesome, as is the Sazerac bar at the Roosevelt hotel (a Waldorf property - very fancy). Make sure you get advice from a New Orleans native or veteran before you go. The city is a very definite mix between the sublime and the dangerous. I am SO IMPRESSED that you got the right recipe! It is mis-typed as 1/2 oz of Benedictine all over the Internet. That is too much. One barspoon is much better. How is it that smooth? It’s the magic of Benedictine Ciara! Also VSOP cognac goes a long way to making the drink. One of my favorites! Try a La Louisiane next. Similar but different proportions (plus absinthe for extra French influence).
