Ingredients:
1/4 cup oil (for paste)
1 large onion, chopped
1 cup cashew nuts
1/3 cup oil (for sauce)
1/2 tsp thyme
1 tbsp garlic, chopped
100 grams mushrooms, sliced
1 tsp salt
1 tsp black pepper
1 cup spinach, chopped
1/2 cup fresh cream
300 grams pasta, boiled
Method:
Prepare Cashew-Onion Paste:
Heat 1/4 cup oil in a pan.
Add the chopped onion and fry on high heat for 2 minutes.
Add the cashew nuts and continue frying for another 2 minutes.
Allow the mixture to cool, then grind into a smooth paste. Set aside.
Make the Mushroom Cream Sauce:
In a separate pan, heat 1/3 cup oil.
Add thyme and chopped garlic, frying on medium heat for 1 minute.
Add mushrooms and cook on high heat for 3-4 minutes.
Season with salt and black pepper, cooking for an additional 2 minutes on high heat.
Stir in the prepared cashew-onion paste, mixing well and cooking on medium heat for 2-3 minutes.
Add chopped spinach and cook on medium heat for 2 minutes.
Pour in the fresh cream and cook on low heat for 2 minutes.
Combine with Pasta:
Add the boiled pasta to the sauce, mixing well.
Cook on medium heat for 2 minutes.
Cover the pan and cook on low heat for 5 minutes.
Serve:
Uncover, mix thoroughly, and serve hot.
